Looks good but a few things to point out. For a more traditional spanish rice you'd want to saute the rice so it's lightly browned, use tomato sauce (not diced) and less (or no) veggies.

No veg? There is absolutely a need for some sofrito to have the correct flavors for a good Spanish rice. Not sure why she uses carrots instead of peppers. But it looks like a good side dish. Haha.

@@dcmc7383 This is obviously a combination of southern creole and Mexican cuisine. You see, in the south a sofrito consist of onions, celery and bell peppers. If you go to Spain their sofrito is onions, celery, carrots and sometimes diced tomatoes. But Puerto Rican and Dominicans chop all the ingredients in the blender that way they'll have it ready for the whole month or longer. We all cook differently but with the same ingredients sometimes. I had my Instant Pot for over two years. Used it once. I am a show me person. I just didn't understand how to use it. It was so confusing to me reading the directions. Then I seen a video on how to make a Cheesecake in it. That was it! I dusted my I.P. off and watched the video several times. I made it with no problems. My family is crazy in love with the cheese cake. Now I am hooked on the videos and I bought a second one to use. I am totally in love with it. I now have all kinds of gadgets to use with it. So nice to use one pot for my meals and not heat up my kitchen. Thanks for the video. I'm looking forward to making this too.

5 garlic finely chopped, 1 big onion diced, 1-2 cup chopped carrots. Saute onions in 2 tbsp olive oil till translucent, add carrots, stir, add garlic stir 1 min, add 1 cup frozen corn stir, 3 cups white rice stir to toast rice few min, add 2 tbsp chilli powder, 1 tbsp cumin, 1 tbsp granulated garlic, 1 tsp oregano , stir few min, add 3 cups chicken broth, 2 cans tomatoes, close lid " rice " function ( low pressure 12 min,) when it beeps let it sit for 15 min before releasing vent.

When dicing onions, it's better to leave the root end on to hold the layers together during cutting and to act as a "handle," then discard it after dicing. As for tear prevention, the sharper the knife the better, because it cuts the onion's cells rather than crushing them. You can also pop the onion in the freezer for a few minutes before dicing. (Cold molecules diffuse through the air more slowly than warm molecules.)

My mother used to hold a wooden kitchen match between her lips to keep her eyes from watering. Dicing onions doesn't usually bother me, so idk if that helps or not. Good tip about the onion "handle."

It doesn’t stop the heat of the onion completely but if you cut the onion in half and refrigerate it first it will not make you cry.

the nice thing about an IP is you do not have to "watch" what you are cooking. I like that about it so I can focus on other things that are going on at the same time. Time wise it seems the same, still, it is a good way to cook some meals. The favored thing I like to cook in it is broth. Do it often, I make it with the cut-offs of the veggies and carcass I have at the time. It saves lots of money and if you have to watch salt intake like me, the best.

Couple things first. I love it. I've never been able to make Spanish rice close to restaurant quality before and this is it. Better than mom's rice for sure. Couple of minor complaints. 1) Three cups makes a mountain of rice and unfortunately, I haven't found a way to preserve leftovers for long term storage. This stuff does not freeze well. 2) Your recipe comes out too spicy for anyone in my house to enjoy except for me. I like it hot but unfortunately the kids don't. I make the following changes: 1) Salt the onions with about 1/2 tsp of Kosher salt to help sweat them down and to season the final dish. I use unsalted chicken stock. If I used salted chicken stock I would omit this change. 2) Use brown rice instead of white rice for a more weight watcher friendly version (Happy wife, happy life) 3) Adjusted cooking time to 22 minutes due to using brown rice 4) Cut the rice and stock measurements down to two cups. That's more than enough to feed my family of four for two entire meals 5) Because the original was too spicy for my kids, cut all of the powdered/dry spice measurements in half and add 2 tsp of tomato bouillon added at the same time as the rest of the spices. The oil, carrots, corn, and garlic cloves remain the same. 6) Use 1x 14.5 ounce can of Gold Brand tomatoes with green chiles instead of the 2x 10 ounce cans of Rotel brand. Doing 2/3 the rice, use 2/3 the tomatoes. 7) Garnish with fresh jalapeno, cilantro, lime juice, and cotija cheese.

looks lovely but I've never seen carrots in spanish rice. for a more traditional spanish rice, definitely add a bayleaf when you're frying your onions and garlic, also a pepper. onions, garlic, pepper and bayleaf is the foundation of the majority of spanish dishes :) always remember wine of course for that authethentic flavour and not forgetting colorante :) . This rice looks lovely and i will definitely try it, but I wouldn't have listed it as spanish rice xx

Try spanish rice using jasmine rice, you can thank me later. You could use basmati rice how ever that rice is really good for a fried rice. I never use just regular rice, I don't really care for it.. The jasmine & basmati rice doesn't have all that starch.. Cooks really good, has much better flavor. Have you ever tried the clintro lime rice.. If not you should give it a go, Its yummy Thanks for the idea with the pressure cooker, I have always just steamed it in a nonstick skillet type pot on the stove lol.. Looks awesome.God Bless

The stainless interior is THE BOMB. That is the only way we cook now. We chunked our slow cookers and just use the Instant Pot. We bought a second one where we can switch out the interiors. Very smart that way !!!

I love the stainless steel. My slow cooker has a ceramic insert which works fine for it. I don't have any cookers with an added non-stick surface.

Instead of mincing my garlic by knife or using a garlic press, I grate it on a microplane, for the same or similar result. An extra point is earned, since you don't HAVE to peel the garlic; the plane captures the "garlic skin." Y'all Be Safe!

Sharon La Tour jasmine rice an basmati rice cooks a lot faster an better.. I don't like all that sticky rice. If need to use a regular rice I usually go with parboiled, I am not a fan of regular rice has way to much starch .. I like fluffy rice, every rice is different you would have to do a test run. My cooker has a setting for brown rice, white rice maybe read your Manuel.

I rinsed my brown rice first before I put in in my IP. It only took 20 minutes for it to come to pressure and cook. I let it set for 5 minutes and released the pressure, it was NOT sticky, gummy or mushy. It was perfect.

I like Jasmine rice, and the Rice setting (12 minutes) would cook it to a mush I think. For plain Jasmine rice, I used the PC setting and cooked it for 3 minutes, then a 10 minute natural pressure release and it was done, firm texture.

Amy make a sofrito with onions bell pepper of any color, garlic, cilantro , tomatoes. Add Sazon Goya Tomato and Cilantro one, one chicken bouillon, check salt levels carefully. Add rice and water and frozen peas and carrots. No corn honey. You will love this recipe. Take care.

That looks tasty. .. I have the 8qt Instant Pot , however 20/20 hindsight I should have gone with the 6 qt. The 8qt is a bit big for two people and I think it takes a little longer to pressurize and release. But if you're a big family or like to make huge portions it's great.
