Yes, he is correct. I was also worked in restaurant and hotels ( tandoori selection and also others sectonns ).they add to much red,green colour in chicken and also add green colour in mint chutney. Sad truth is people also like that. Even Im hotel, I don't eat that. Be careful when you are going to eat in star hotels and restaurants(especially meat).

The reason why restaurants and street food joints continue to practice this is not just only to make more money but the lack of knowledge to store/preserve food items including meat and the food safety measures. The same way people get driving licenses without knowing to drive and use light indicators, by bribing the agents and RTOs, these establishments just apply for FSSAI and get a license. There should be periodic inspection at all food joints in addition to the food joints declaring that they meet food safety standards every year - not just in paper but in practice too.
