Ingredients:
Cake layers (4 x 17cm, my baking pan: amzn.to/3y5ot0N):
- 100g soft butter
- 200g sugar
- 1 tsp vanilla
- 3 eggs
- 1 organic lemon
- 180g flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 150ml kefir or buttermilk
- 60g freeze-dried strawberries
Buttercream:
- 9 egg whites, medium
- 375g sugar
- 450g soft butter
- 1-2 tsp vanilla
- 30g freeze-dried strawberries for dark pink buttercream
- 10-20g freeze-dried strawberries for light pink buttercream
Filling:
- 300g cream cheese
- 100g whipped cream
- 50g sugar
- 1 tsp vanilla
- about 200-300g strawberries
- fresh basil for decorating
Bake the layers in a preheated oven on the middle rack at 175°C for 20-30 minutes. Do a toothpick test before removing the layers from the oven. Let them cool in the baking pan for 10-15 minutes before removing and then let cool completely.
