I wanted to make this lasagna soup you made on your cooking show for the longest time. I made it tonight snd everyone loved it! I added corn in mine and it was a hit! With garlic bread sticks. I know lasagna doesnt have corn in it but since it was a soup I thought it would be a good addition. It was wonderful. I always like to add veggies when I can. I make my potato soup almost identically. The only thing I do differently, is I buy O'Brien style potato hashbrowns (that has onion & peppers in the frozen bag) it's awesome! 😊

The chicken tortilla soup would be great with soft flour shells. Cut then up in 4 or more pieces and fry them up. This way you have like a Mexican cracker. They fry up so fast and easy. Cheese, sour cream and avocados on top right before you eat it sounds so good. Ladies check your thrift stores for bread machines. I picked up brand new ones a few years back under 20.00 for both of them. My one bread machine finally kicked the bucket. My second one only makes a 1 pound loaf. You can mix the dough in the bread machine, shape it and cook in the oven or mix it and cook it in the bread machine. You get a high square loaf but great for soups. If you have a Dutch oven, you can make Dutch oven bread it is so easy. That is perfect for soup with a nice hearty crusty crust on it. You just mix the bread up. Shape it in a ball and let it rise while it is rising you put your Dutch oven with the lid on and let it heat up as the bread rises. When it is done take your Dutch oven out, put a nice piece of parchment paper in the pot, but the bread in put the lid on and let it bake 45 minutes to an hour I think. This is also a no knead bread. I picked my Dutch oven up at the thrift store for 4.99. It is a Food Network brand so I know whoever bought it paid a pretty penny for it. I paid pennies for it. I was lucky that day. Our highs have been middle 40s this week. Great soup weather. I am making up a dish for dinner on Thursday. It is gonna be a crockpot dinner. I think I will call it Spinach & Artichoke Chicken with Ravioli with a Blush Sauce. (Blush sauce is just pasta sauce and Alfredo mixed together).

I am absolutely unable to ever follow any recipe, of any kind. But this winter, I’ve been big on dumping a variety of ingredients into the crock pot, to make soups of various kinds. My favorite soup is chicken tortellini soup. There is something so yummy and comforting about a bowl with sweet Italian sausage, chicken breast, and cheese filled tortellini. Hi Mel. Can you tell me what brand of lasagna noodles you used in the soup, I know you said they were oven-ready but I have looked for years for the lasagna noodles that have ridges not only on the edges but through the whole noodle. I think when making lasagna, the ridged noodles hold things so much better than the flat noodles with ridges only on the edges. It looked so good.

I could have eaten every bite and licked the pot! However my significant other won't eat soups, chili, dumplings and just about anything with a broth, including spaghetti. Really bums me out. We are your near neighbors just off the Blue Ridge Parkway in western NC. This beautiful fall weather has really put me in the mood to cook. I'd have to eat off a potful for a week by myself or try to freeze most of it. No close family or neighbors to share with. Loved watching you cook and hearing a sister southern girl.

If you like using the frozen bread dough try using the frozen rolls to make Cinnamon Rolls. I make a dozen in a 9x13 greased pan. I melt a stick of butter and take a dozen frozen rolls and drop them in the butter and roll them in 1/2 cup of sugar with 2 Tbsp of cinnamon stirred into the sugar. You drop the butter covered roll in the cinnamon sugar and put them in your pan. Do this before bed. Cover with a towel and let them thaw and rise during the night. In the morning bake at 350 for 12 to 15 minutes. When you remove them I immediately like to ice them with part of a can of cream cheese icing. The icing melts and they are delicious. The leftover icing I just refrigerate and use it later. I am a retired nurse. I was the House Supervisor at a nursing Home. I use to take these rolls to the nursing home as a treat for my staff a couple times a month. I could make and take 36 rolls for less than $10. So easy yet it let them know how much I appreciated their hard work. Great moral booster too. My family love these rolls. We are empty nesters. I make 2 pans. One for Mark and I and one for my daughter and family. They live 2 blocks away. On the weekend they love when I call on Sat or Sun morning and I tell them to come pick up breakfast. My grandson who is 13 months old can eat 2 rolls.

I'm not a real big soup fan because I didn't grow up eating soup other than my mom would occasionally use leftover mashed potatoes to make potato soup and we would often have it on Fridays during Lent. There is a local restaurant here where I live that makes the best potato soup I've ever tasted and your recipe seems somewhat similar to it other than the fact that they actually use baby potatoes not hash browns but I've always tried to figure out how they make the thickening for it cuz it does have a tank to it and I'm wondering if they use the cream cheese like you're doing. I'll have to give that a try. They also put bacon, cheese and scallions in it and on it and it is absolutely delicious so I'm going to give you a recipe a try. I also like the look of that lasagna soup because I love Italian food and lasagna is one of my favorite dishes but it is a lot of work to make. I wonder if it would be easier if you use the little mini lasagna noodles as the pasta in it and then you wouldn't have to break up the heavier large full-size lasagna noodles that perhaps would maybe take a bit longer to cook because they're a bit thicker. I'm sure like you said you could use pretty much any kind of pasta or lasagna noodle you'd like in it and it would taste delicious. I'm not a real fan of spicy Mexican so I'm not sure if the tortilla soup would be something I would really like but I've seen a lot of people bring a tortilla soup or a white chicken chili to get together so I know they're quite popular and yours did look good. My mom would always use those loaves of frozen bread dough to make homemade cinnamon rolls. She would let the dough thaw and she would roll out the loaf to be about maybe a quarter of an inch thick and then she would just start putting all of the butter and cinnamon and sugar and brown sugar and nuts in there and roll them all up and cut them and put them in a greased pan and then let them rise overnight and bake them in the morning and boy were they good! So that might be something else you might want to use some of that frozen bread dough for now. Just a thought. I will definitely check out your bread making video because I've been wanting to try to make homemade bread myself but I'm nervous of yeast and I don't know why I know it's been around forever and it shouldn't be that difficult so it's probably one of those things that I just have never done it so I'm reluctant to try it. Thanks so much for sharing mel, we are supposed to get down to 21° tomorrow night so we will have a hard freeze here in Nebraska for the first time. We did get down to around freezing a couple of weeks ago one or two nights but it's definitely time for the furnace and the flannel sheets. I have looked at every store I go in for those cute little mini lasagna noodles, because that is what I really want to put in this soup, but I have not found them ANYWHERE LOL And with potato soup, my mom will thicken hers with instant potato flakes. It doesn't have that good zing that the cream cheese gives it tho. I love your moms use for the frozen bread dough, I will have to try that for sure!
