Becky, I just wanted you to know how much you inspire me. I have a disabling neurologic condition where my body doesn't always want to cooperate, so good days have to be really productive. I gotta get stuff done while I'm able because I don't know when my next bad day will be. Today on a really good day, I made half batch recipes of your salsa verde chicken and chicken soup base that you made with your sweet MIL in an earlier video. And whilst busying myself, I am watching this video and quite literally made Renee's chicken and rice with you for dinner! It feels nice to know I can still have nutritious food prepared ahead of time for my son for when those not so good days inevitably come. Thanks so much for the canning (and dinner) inspiration!

FYI; I have been making the taco bake for years; I let my kids pick out their birthday dinners and my middle son had picked this one. I write the dates in my recipe books and who picked it. That way I know if its extra special for that child and sometimes the recipe becomes a family favorite letting the kids be involved. Tip: I don’t add the chips because they get soggy and don’t make good leftovers. I just bake the meat & cheese mixture adding the mixture over the chips after. Another advantage to that is if you have to much leftover it freezes well without the chips… by the way we like Frito’s, Sour Cream and Black Olives…it is a versatile recipe.

My greatest admiration is how you keep Baby Acre protected from the camera. While I'd love to see how cute he is and how he's growing out of natural curiosity, I'm happy to leave it to imagination. A tip from someone who cooked at a big name restaurant for 10 years. When you cook in the oven and want meat tender and juicy by keeping all the steam inside the cooking vessel first put some Saran Wrap ( or cling wrap) then put the aluminum foil on. The Saran Wrap almost vacuum seals as it’s warming up. Speeds up cooking meat a bit too, so be warned! Lol

I make a really similar casserole to your taco bake too and I can do it three ways! Use the chips as you did for one. Another way is to put the filling in a pan and top with cornbread mix, bake, and top with cheddar cheese., the third way is to add a cup of rice and extra liquid. Keep the tomato juice and add about a cup of another liquid. They are all so different, yet similar and a good change.

So Becky, as a true American/Italian B'Bommer, I think the chicken parm looked quite good ! I might only suggest that the sauce be thinned out a bit to go over the spaghetti. Of course, when I send food out, I usually include some fresh grated parm since most people don't keep it on hand. Also, besides picking up the salad, a fresh loaf of Italian bread or pre-made garlic bread would truly round out your delicious meal. What a nice gesture 👏 for your sis & family. Good job 🫡 🏖 Kj in Tampa Bay 😊

So happy I found you. I am an American living in Egypt. No canned soup here, which I do not like to use anyway. I love how you cook and I am going to be making these things and enjoying them.

I look forward to watching your videos which seem to be released when I’m waking up of a morning (Australia). Perfect timing! The chicken and rice bake is one of our favourites too. Recipetineats has many quick, fantastic recipes.

Also Aussie. I also recognised Nagi's recipe. It's a firm favourite in my house.

I’ve been watching for awhile but this is my first comment. Thank you so much for sharing these delicious “comfort food” recipes. I work full time and these dishes look fairly easy to prepare. What a sweet sister to make dinner.

I make a taco bake that’s similar but I put the meat mixture on the bottom, then a layer of cheese topped with cornbread. It’s a family favorite!

Once a month or every six weeks, I bake up two full chickens and shred/chop up the cooked meat and store it in two person serving sizes. I love having cooked chicken available so that I can make a quick - 15 to 20 minute dinner right after work without too much leftovers. If I need extra chicken for a full casserole I just use two or three of the portions that I put in small sandwich bags and then stored in a freezer bag. I reuse the freezer bag since it never has food touching it. My meal planning has really improved since I started watching Becky's videos.
