Some people just process alcohol a little differently and don't show their level of intoxication. I've had people swear I was stone cold sober when I should have been cut off way before. My liver is tested regularly (age and meds) and it's perfect. So long as she's not drinking epic amounts daily she could well be fine. Genetics also play a huge role.
