Irresistible Lemon-Infused Potato Salad: A Must-Try Summer Recipe!

Hi Lovelies,
do you like eating salads in the summer? I feel like when the weather gets hot and you don't feel like eating anything warm, a filling salad makes a perfect meal. This is exactly how I feel about todays recipe, my lemon-infused potato salad :) This salad is light, refreshing, it has a lot of flavour and it makes a perfect meal. You can take it to a BBQ or enjoy it as a light lunch or dinner at home. Want to try a new kind of potato salad, then this is re recipe to go with :) Enjoy!
Ingredients:
(makes 4-6 servings)
- 1 kg potatoes
- 200 g green asparagus
- 100-150 g baby spinach
- 1 red onion
- 7 radishes
- small bunch of fresh dill
- one organic lemon
- 2 tbsp olive oil
- 3 tbsp yoghurt
- 1 tbsp mustard
- 1 tbsp brown sugar
- 2 tbsp lemon juice
- salt & pepper to taste
