My mom grew up during the depression and liver, kidney, beef heart was the only meat they could afford. Fortunately, she continued to serve this food to us long after the depression was over! It must be good because she is 99.4 now and has never had a doctor!

Best liver is from grass fed animal! Little tip: when you put liver in the pan, fry it just a little bit on each side and don't put a salt on it. After is done, I put salt and pepper on it and diced onions with salt and pepper. On top of it I put another batch of liver and so on. If you don't salt liver while preparing it, it will hold juices and taste much better.

In Greece liver, especially beef liver, is widely eaten either fried in extra virgin olive oil liberally sprinkled with oregano, or grilled, again sprinkled with oregano and/or accompanied with sautéed onions. In either case it is delicious and we eat it from a very early age, thus we are not adverse to its taste and/or texture; on the contrary we love it! I am glad to hear you say that it is a superfood! One of my (many) culinary surprises when I migrated to the States in the late 60s had to do with my discovery, to my dismay, that liver was not...loved (to put it mildly!) but, dare I say...reviled? I love it!

*HELPFUL HINT:* For those of you who can stomach chicken liver but find the taste of beef liver overwhelming. I roast a hen (chicken) in a large covered roasting pan and I put a pound of beef liver in the bottom of the pan and allow it to cook in the chicken fat and drippings. The leftovers will allow the two of us (grummpa and I), to enjoy three meals of roasted chicken and beef liver. (We eat the chicken innards too including the heart and gizzard.) There are many ways to cook liver and this may not be for everyone but beef liver roasted in a pan with organic free range chicken fat is our favorite. And it tastes like chicken liver too. Don't knock it until you try it.

Thank you! As an Iranian, who eating liver is in our blood 🙂 I really enjoyed this video! We eat mostly lamb or chicken liver and one of our national foods is lamb liver simply cut, skewered and grilled on charcoal, served just by salt. Me personally love the liver the way I love steaks: medium rare 😋 For chicken liver I recommend you to stir fried it with chopped onions, garlic, any spices you'd like, salt and fresh lemon juice. Bon appétit !

We always ate liver growing up. Liver, heart, gizzards and the occasional pork brain. My Mom always called the chicken (or turkey) liver the "cook's piece" and she and I would "fight" over it. LOL! She would split it with me in the end. My husband won't eat it but I try to have some at least once a week. Going to try Neisha's pate recipe soon! Edited to add: A friend of mine makes some of the BEST Liver and onions. She has the butcher cut the liver 1/2 to 1 inch thick. Cook in bacon grease with a bit of pink in center yet and she cooks the onions separate.

@@aribernays If you just put a slice of liver in the blender it won't be liquidy enough to mix with the ground beef, so I add an egg and some bone broth. I use the eggshell because it's a great source of calcium and other nutrients, and the blender chops the shell into tiny bits which add just a little crunch to the beef, but you don't have to do this.

I LOVE beef liver and onions IF cooked the way I like it. Slice onions, a LOT of onions, more than you think you need, and sauté in large skillet low and slow in butter or bacon grease or beef tallow, ghee or olive oil whatever works for you. Just make sure to do it low and slow until well caramelized. Bring a pot of water to a boil put the liver in boiling water to par boil for 1-3 minutes depending on how thick it is, this take out a lot of the super strong taste. Take out and cut into bite sized pieces. Brown liver on all sides then add to skillet with onions. Cook on medium low 10-20 minutes depending on size of pieces of liver and your personal preference of doneness. This can be for dinner or breakfast. Breakfast either top with fried eggs or you can make a little well in the skillet with the liver and onions and poach your eggs right in there. Just had it for breakfast yesterday and doing the leftovers for breakfast today.

Calves liver is much milder in flavor and more tender in my opinion, but you can soak your liver in heavy cream for a few hours in the refrigerator. It helps tenderize it and helps tone down the flavor. Onions and lots of bacon 🥓 help too. And you can fry it in the bacon grease to add more flavor and throw on some salt and pepper 😋😋

I eat calf liver 2-3x a week now since being Carnivore for over 3 months. I never liked it before, and now I love it. I prefer calf liver due to a higher vitamin A content which is specific to my needs. I highly recommend it. It's easy to mix into meatballs and the flavor is actually quite subtle if cooked right. I use cheese, eggs, and a dash of heavy cream to mix it all in. Sometimes I add bacon too. Love it!

I'd just tried raw ox liver for the first time, diced into very small pieces with some redmond sea salt with a table spoon. It wasn't great, then I tried a second tablespoon and it wasn't as bad, the third time I just chewed lightly and swollowed about 15grams no problem. Lightly salted helped.

It's good that our traditional Ukrainian food always had fried liver...We more often used it as a filler for pies and pancakes, but also as a separate dish. By the way, if you use pork liver, you can leave it in milk for about 30 minutes (or more) and it will make it less dry and stiff. Also, don't salt the liver straight away, only in the end of cooking.

Squash contains no vitamin A (retinol) whatsoever, since that vitamin is only found in animal foods. Liver is the richest source of Vitamin A. Squash may have _beta carotene_ and other carotenoids which are plant pigments that can serve as *precursors* for the synthesis of vitamin A in the human body. Unfortunately, this is a very unreliable way of getting sufficient amounts of the vitamin since there are very wide variations in peoples' ability to make true vitamin A from carotenoids -- apparently some people cannot do the conversion at all! It's much better to eat liver than squash if you want to increase your Vitamin A levels, and as long as you're eating liver, it won't matter whether or not you eat the squash. That said, if you like squash, go ahead and eat it -- just not for vitamin A.

I poach vidalia onion slices in their own extracted juices- no butter or oil needed- for two hours on very low heat in an Instantpot, then reserve the liquid for adding to stock or soup later and then carmelize the drained onions and add 3Tbs aged balsamic vinegar (preferable 10 years or older) and 1tsp brown sugar- if using a younger vinegar, may need up to 1 Tbs of sugar. Placing the 1/4-1/2" sliced liver in the same pan, I sear on medium high heat basting with butter and fresh Rosemary or Thyme for two or three minutes each side. Cost? $2.50 per plate. Two minutes additional each side and you've got the infamous seasoned, buttery shoe leather. It's not complicated- just very quick!

Well Dr. Ken, I tried liver for my first time since childhood, and I must say it was way more disgusting than I remember. I cooked it in salt and ghee. I forced it all down despite my gag reflex. I tried it again today (2 weeks later) and used bacon fat instead of butter along with half of a yellow onion. This was much more tolerable, but certainly not good. I very rarely eat veg, but I have to make an exception on liver day because onions are the only thing that makes this palatable to me. Most of your advice ends up coming to fruition in this house so God I hope that my palate evolves over time. Meanwhile, liver is the most difficult thing for me to eat. 😂 You have helped me tremendously. 6 weeks into carnivore, and down one waist size and 13 lbs. Thanks for all the FREE content. It does not go unappreciated!

Cod liver-the actual liver, not the oil- tastes awesome! Until recently I didn't even know you could buy the livers of cod. When I learned you could, I felt a bit nervous about trying it. In fact, the tins sat in my pantry for two months while I gathered my courage. Then I found out that it's considered a delicacy in Scandinavia and that other places in Europe regard it as the poor man's foie gras. So I opened up a tin, and wow was I pleasantly surprised. The texture and taste are both beautifully delicate. Now I have to limit myself to one tin every other day, because I don't want to burn through my supplies too quickly. Also...I am a little worried that eating two tins a day really might deliver too much vitamin A. I know Dr. Berry said that eating any liver you buy in a store 5 times a week was safe, but he didn't say that eating it 14 times a week was safe, and I fear that if I let myself go, I *might* eat that much! :D

Try eating it fresh and raw. Raw liver is actually very sweet, and if patted dry, has the texture of gelatin.

I mix it with ground beef, and found a blend that includes grass fed beef, beef liver, beef heart, and beef kidney. Makes a tasty bunless burger :)

Resting Bitchface : I’ve entertained the idea of taking a bite raw just to see if I could handle it. I can eat some “cooked” but after a while, like Shannon, get the gag effect. LOL Not giving up incorporating it into the diet.

I’ve found chicken liver is not as intense as beef. And the last time I tried beef I let it get to room temp and rinsed the blood via a strainer helped considerably. I do REALLY enjoy some liverwurst tho.

I'm with you Shannon, but liverwurst made into a dip with celery is tasty to me.

SMOTHERED KETO BEEF LIVER WITH BACON AND GRAVY. SUPER DELISH I like liver and onions. I saw recipes for smothered liver and onions online and wanted to try it but they were not keto or carnivore . I did some experimenting to get the smothered part and stay ultra-low carb and smooth, not gritty sauce . My first step was to sauté 1/3 pound of bacon that I cut into 1x 1 ‘’. In the same pan, Before making the roux, I sauteed ¼ of a sliced yellow onion in the bacon grease and set them aside, to be added in the final cooking of the liver. The key to it not being gritty, as almond flour can be, was to cook the roux made with almond flour with lots of bacon grease very slowly and for quite a while, and adding a teaspoon of wheat flour, stirring constantly. I cut the liver into 2 x 2’’ pieces before cooking. In the same pan I cooked the liver, onions and 1/3 pound of cooked bacon till liver was tender.. I used Skylark brand frozen liver, but any liver will do. Any bacon will do. I used tap water to deglaze the pan and added that to the final dish. APPROXIMATE NET CARBS: 2 TABLESPOONS ALMOND FLOUR 3 ¼ SLICED YELLOW ONION 3 1 TEASPOON WHEAT FLOUR. 3 2 LARGE LIVER STEAKS 0 1/3 LBS THICK SLICED BACON. 0 SALT AND PEPPER 0 YIELD. 2 GENEROUS SERVINGS CARBS PER GENEROUS SERVING AROUND 5 NET

I am a vegetarian and my body ask for chicken liver. I think I will eat it more often. It is something that I love to include in my diet once a week. I have been growing up with liver pate, liver slices on bread, liver sausage. In The Netherlands it is used in a lot on bread. I just have to think what else was something i really enjoyed when i was younger. Much love. xx

Liverwurst is handy for me and try to have it at least once a day with my low carb toast. I grew up on all kinds of liver and organ meats as a kid and at 63 no issues with my health except the rare occasional cold. I eat the way my grandparents ate with the only exception of a very low carb diet. It works for me!

Does anyone know if it has to be beef liver? What about pork liver, kidney? Would it work the same?

I get 16oz containers of fresh chicken livers for about $1.75 at my local grocery store. While I have breaded them before with almond flour, I now cook them simply in a cast iron skillet with olive oil and a little salt.
