The spiral roti is actually called Laccha Paratha. In India, we add ghee/oil and then fold it. And, yeah u can call it roti(all purpose flour/maida) because it puffed-up lightly. The ones we eat on daily basis is Whole-wheat chapatti or bread.

Is the purpose of rolling a roti like that to incorporate the insane amount of Ghee that's added so you get that pull apart flakiness? Its almost a similar thing (but different) technique for making croissants where you fold and fold your butter in....
@acooknamedMatt3 жыл бұрын
The way chef Akshay at Junoon explained it was so the layers will sort of flake apart. It’s different when you cook it in a tandoor

@@acooknamedMatt Ahhh ok - that makes sense and I'm misremembering too, I just realised Paratha are the ones I'm thinking of, its a similar process where you make the dough, but apply more fat and roll up and then fry. Great channel thanks for making tasty looking food, and gawd damn the Mexican stuff, right up there with best cuisine in the world.

What you were try na make ia a laccha paratha. you've rolled it too much that's why you can't see the layers. also this won't technically be called a roti cuz a roti or fulka as we call it is made with simple water and all purpose flour. the others such as bhatura or puri or laccha paratha have ghee or oil added in them not animal fat. hope this helps. luv your channel btw. 💜
@acooknamedMatt3 жыл бұрын

@nonsketchsquad3 жыл бұрын
@@acooknamedMatt Everything he said was correct except for the reason it didn't work. The reason it didn't work was because you need to put the oil / ghee on the roti after the initial roll (+ a light sprinkling of dried flour) and before folding. This way there's fat between the layers which prevents it from recombining.
