A recipe for ice box cookies and salted caramel nut cookies with more effort than usual ♩
The crunchy texture of caramelized nuts and the perfect balance of sweetness and saltiness are irresistible 🤤
It's so delicious that you can't stop when you start eating ♡
It's also salty, so it's also recommended for cookie tins ◎

~ Walnut Caramelize ~
【material】
・ Walnut 80g
・ Granulated sugar 30g
・ A pinch of salt
・ Water 8g
☆ How to make
①. Put the walnuts in a frying pan, roast them lightly on low heat for 1-2 minutes, and leave them in a vat. (OK if it smells fragrant!)
②. Put granulated sugar, salt and water in a frying pan and cook over medium heat until the syrup is shaped.
③. Add ① and mix quickly. It crystallizes whitish, but heat it while mixing until it becomes caramel-like.
④. When the crystals disappear and the whole becomes caramel-like, remove it from the heat, open it on a cooking sheet, and loosen the sticking parts with chopsticks.
⑤. When the heat is removed, chop it roughly.
~ Cookie dough ~
◎ Preparation
・ Let's bring butter and eggs to room temperature.
・ Preheat the oven to 180 ℃ before baking.
【material】
・ Butter 100g
・ Granulated sugar 60g
・ 1 egg yolk + egg white = 30g
・ Soft flour 110g
・ Almond poodle 35g
~ Topping ~
・ Appropriate amount of salt
☆ How to make
①. Loosen the butter with a rubber spatula until smooth.
②. Add granulated sugar in 2 to 3 portions and mix well each time.
③. Switch to a whipper and mix for about 30 seconds.
④. Add egg white to 1 egg yolk to make 30g, and after melting and loosening, add in 2 portions and mix well each time.
⑤. Sift the cake flour and almond poodle and mix them with a rubber spatula. Add the caramelized walnuts in the desired amount and mix with the powder still remaining.
(Be careful not to knead!)

⑥. Divide the dough into two pieces (generally OK), open them in plastic wrap, stretch them to a thickness of 1 to 1.5 cm, and let them sit in the refrigerator for at least 30 minutes.
⑦.⑥ is molded into a rod with a diameter of 3 cm and left in the refrigerator for at least 2 hours. (It's hard to cut unless it gets cold, so you can freeze it!)
⑧. Cut to a thickness of about 1 cm, arrange on the top plate and sprinkle with salt.
⑨. Lower the oven preheated at 180 ℃ to 170 ℃ and bake for 15-18 minutes. (Please adjust according to your home oven.)

* Frequently asked questions *
・ Unsalted butter is used for butter.
We do not recommend salted butter as it will change the taste and finish.
Unsalted margarine can be used as a substitute, but the taste may change slightly.
・ The oven is always preheated.
-Cocoa uses pure cocoa powder.
Sweet cocoa for drinking contains sugar and cannot be used as a substitute.
・ Chocolate uses couverture chocolate for confectionery.
Commercially available chocolate bar can be used as a substitute, but it is recommended to use couverture chocolate for chocolates such as raw chocolate that directly convey the taste of chocolate.

お返事遅くなってごめんなさい🙇🏻‍♀️ 卵黄など計量が面倒になってしまうかと思いますので、レシピ通りに作っていただき、残った分は焼かずにそのまま冷凍しておくのが良いかと思います◎ ラップで包んでジップロックにいれたら、1ヶ月は問題なく保存できます!
