I'm going to try this with zucchini using the same method including salting the zucchini first. I am allergic to eggplants. I also make a gluten free breadcrumb mixture that is pretty good. I really like your idea and have never seen it before. Very unique! Thank you for sharing! My husband is the eggplant master and I will share your recipes with him!
