The bakery that I worked at always used the pudding mix in their yellow cakes too. It always smelled so yummy. I’ve never even heard of this cake before ! Looks really yummy 🤤

Looks delicious. My favorite cake of all time. Toasting the pecans and coconut. really does bring out the great flavor. I love using butter in my cakes. The pudding pulls a lot of the moisture out too. I usually add more buttermilk because of the pudding. Yummy. Great job and Merry Christmas 🎄🎁 FW

And yes, you are right: toasting the pecans and coconut helps with the flavor so much--I honestly wouldn't make this cake without first roasting them in the oven. Just out of curiosity, why are you adding pudding mix to this recipe, when you're already using buttermilk?

Hi, Jon! I add pudding mix because it definitely adds extra flavor, and also because a lot of people say that pudding mix helps to keep cakes moist. I can't say 100% for sure if that is true, but I have seen at least one brand advertising "pudding in the mix." The buttermilk helps to make it fluffy, as well as balance out the bit of extra sugar from the pudding. Thanks for your question. If you make this, I am sure you will love it! 👍🍰
