BEST cooking video I've ever watched. It's like being with your mother in her kitchen. She's not trying to make a video... she's just sharing her world. The love that she puts into her focaccia is Hallelujah! I don't care how long the video is... 26 minutes... I want to be in her kitchen every day. "Thats a nica color".. and her song is the best of the best. Whomever you are that are the videographers (of your mother or grandmother) You are AWESOME... that you let her do her thing and didn't interrupt her at all - it makes the process PURE AND NATURAL. Gina, I'm so grateful for your channel for 2 reasons. One mostly for my mother who is 84 and watches your show and it keeps her company through this pandemic. We sometimes sit together and watch you, and talk about how much we love everything you make! I watch you as well on my own you make me smile, I love your spirit and your sweet gentile kindness comes through in every show. In times when I'm in a crisis or my back is against the wall I head for the kitchen and cook for others. It jump starts my positive energy flow and soon I get the answers I need to get over whatever obstacle had me stymied. For me it's cooking, for others it might be something else. I find great energy in feeding people. I have no family so I feed my neighbors and coworkers.

When I was young my family moved to a small suburban neighborhood. Lots of new friends & cultures! One family was Italian, Neapolitano. Their nana lived a short way aways from us (in little Italy). All day Saturday she shopped & cooked. Sunday her son-in- law went to her place & brought her and all the delicious food to her daughter’s home. After church we always went to see what Momma Icano made for us! All day the food was on the table & anyone who came ate! Her granddaughters had no interest in cooking, but I did, so she taught me a few things. I love your voice & accent & food. It brought me right back to my childhood! I love it so much, all those wonderful times. Gracias!

Must say that I have tried many focaccia recipes and all of them good, very good actually but yours is my favorite by far. I have made it several times now and each time it comes out wonderful. I love how Gina uses the simplest tools to cook, like the fork and bowl to mash the potatoes. Nothing fancy, just like my Grandma in the 1950s. No need to buy fancy or expensive appliances. You’re amazing Gina!

It is important to know how to ‘help’ the dough rise. Love that she uses the same plastic & towel to cover. Thanking you for sharing these important steps. Hello Italian Grandma Gina, just checking in to make sure you are well and feeling really good. I am going to make another Focaccia right after I send you this thank you message. Since I watched this video I have made Focaccia many times. I have altered your recipe slightly by adding fresh garlic slivers into the dough. Also, I started using a ratio of 3/4 bread flour and 1/4 whole wheat flour which gives it an interesting depth in flavor. I have to confess that last week I tried someone else's Focaccia recipe. Absolutely NO good came from that experiment. My hubby made me promise to NEVER EVER again use another Focaccia recipe except yours. He did not have to twist my arm, I wholeheartedly agreed. That's it for now, Gina, I'm off to the kitchen. Wishing you wellness and that The Universe watch over and protect you and everyone near and dear to you, always. Nice to see someone from Grottaminarda. Both my parents were born in Gesualdo but when they married, they moved to Grottaminarda, where they had a house, and my brothers were born. They were farmers, so I doubt they spent much time in town, however that is where they attended church, purchased what they could not grow or make themselves etc. I am first generation Canadian, living in Toronto, Ontario and have never visited the old country, but plan to take my entire family in a few years time. This region of Italy is especially musical and as the only girl in the family, I remember my father, to my irritation, singing Oh Marie every chance he had. What I would give to hear his lovely voice once again. Good memories.

I lived in Oakland, CA when I was young and we lived in a neighborhood where our neighbors were almost all related Italians. There were two bakeries, Bon Gusto and Genoas, where my father would go and pick up different flavored focaccia and bring home a few slabs for us. It was great with salami and prosciutto. I have tried making focaccia many times but have been unsuccessful but I think if I follow your instructions I might have it turn out to my satisfaction. Yours has the texture with all of the nooks and crannies that I am looking for. Yours turned out beautiful! I loved the beautiful heartfelt song you sang too.

I wanted to chime in and say something practical about this channels recipes - They work and well. I've made a few of her recipes and all have turned out incredible. Try them. Definitely try her Ciambotta or her Zucchini Parmigiana. So far they are all great and she teaches so easily how to make them; the mark of a truly great teacher.
