My father was Italian and this was a breakfast that he enjoyed. It was very economical because his family grew peppers in their garden, raised their own chickens for eggs, and baked their own bread. I like to season it with an Italian seasoning herb blend that makes it taste like it has sausage in it but it doesn't. It's a delicious sandwich that we enjoy.

Ah! Memories. My Mom would make this with the long light green peppers instead of the mixed red and green and put on rolls wrapped in foil, put in an insulated bag and taken to Jones beach with a jug of iced tea from a powdered mix - Nestea, I believe. Thanks for reminding me. I make it sometimes too but doesn’t taste like hers.

My dad's roots were in a suburb of Naples (Altavilla Irpina, a village on a mountainside), so this was a huge favorite of his; I can't hear anyone mention "peppers & eggs" without thinking of Dad, and smiling from the heart, so thank you for eliciting a special memory for me here. (Alas, I cannot tolerate eggs and neither Eric nor I care for bell peppers, so if I make this recipe, it will be to give some other friends a bit of honest Italian home cooking.) Just found this video and it made me smile. My father was born in Sicily and I have fond memories of him making this kind of sandwich often when I was growing up in the 70s and 80s. I think he and Mom still make it now and then.

Grandma, I'm an American but my all my grand parents were Italian, some from Sicily some from Naples. I have always loved this dish, as well as onions and eggs, eggs and onions and onions, potatoes and eggs as well as garlic, oregano, tomato sauce and eggs. Yeah, we were poor but we'll feed. Love you grandma and grandpa. 🌻

Joann, you're a _paesana_ (homegirl) of mine if you have Neapolitan roots -- and you know how to eat healthily and well for practically pennies, sure. We had a great advantage, starting out on the Mediterranean diet long before the American Medical Association and the American Heart Association knew how fantastic it was for one's well-being.

I had never heard of this dish but when I lived in Florida there was a sub shop nearby and one day, while I was waiting for a sub, I noticed a guy cooking peppers and eggs on the grill. Then I saw it listed on the wall menu as "Special Order". Every since that day, I make these at home and they're a real treat.

I can confirm that this is how an Italian mother or grandmother would make it. Always need two different color peppers. Could use red, green, orange, yellow in any combination. Always crack eggs in a bowel and whisk them up. Never crack them into the pan and then mix them. They will not be mixed well. My mother would use a butter/olive oil mix, but it is not mandatory. Depending on the season, Mom would use fresh herbs to season. They dry mix is fine. Sometimes she would just do salt and fresh ground black pepper. On some videos they add cheese. That is wrong. We would have it on hard rolls, but bread choice does not factor in that much. If you are really hungry, then grinder rolls would be good too. This is very authentic for an Italian family. For some this is a recipe they need to learn. For many Italian families, you grew up with it, so you just know it from eating these sandwiches so many times. It is said that Italian mothers cook love, not food. This is an example of that. Nice video.

We're not Italian but due to my grandpa being in the military my dad grew up in Europe, mostly Spain and Italy, he never even entered the USA until he was 17. After my dad was 18, he joined too and eventually my family ended up in Sicily. I had no idea this dish was Italian, but my mom made it for us so often! Usually for dinner as it's fast and she worked full time so didn't have a lot of time for weeknight dinners. Often we had this with a side of zucchini in tomato sauce, white bean soup, or salad. It was one of my favorite meals as I was not a big meat eater (vegetarian now 20 years) 😂 my mom usually made some Italian sausage for my dad to go with it, though.

I have always wondered why the eggs that I see ppl using in the US are soooo pale compared to the ones that we get in Australia. Do eggs get washed or something before sale over there? Our eggs are a medium colour here. I have seen free range eggs that are much darker though.

@@megancaldaia6708 Hi Megan. I know this was from a couple of months ago but I see your question went unanswered. I grew up on a small farm, so I know a lot about chickens. The color of the yolk depends on their diet; the color of the eggshell depends on the variety of chicken (often egg color is related to feather color). I guess we commercially use a different type here than you do down under. Almost all eggs are indeed cleaned before going to market, because no one wants to buy them with poop and straw attached, and they keep longer when sanitized. Most of our egg production here I think is still done in large production barns, where they keep them laying constantly (food trough in front of the nesting box and lights on constantly). You increase your yield, but the quality suffers a bit from the forced timing. Lately more 'free range' eggs have been available (the chicken goes to the nesting box when they want to, but often they are still confined in a barn). Growing up, we truly had free range chickens, before it was even a thing----they were unpenned, had the run of the yard, ate a lot of grass and bugs as well as chicken feed, and often roosted in the shrubs! The eggs had very dark orange yolks.....but there was a downside. To this day, I cast my eyes on the ground while walking, to make sure I'm not stepping in something I shouldn't be!🤣

@@patriciamorgan6545 TY Patricia. The shells are just so white in the U.S from what I have seen on tv and on You Tube videos. Our eggs aren't that white at all over here but, kinda more brown. Must be different kinds of chickens as you say. Many thanks. I just often notice the big colour difference in the shells and often wonder about a possible taste difference too.

@@megancaldaia6708 The shells can be white, tan, brown, or greenish, depending on the breed. Though marketers (here, at least) might have you believe it, shell color isn't related to taste or quality. 'You are what you eat' holds true for chickens as well as us---the flavor and nutritional value of the egg depends on what the chicken is eating.

Very good simple recipe is best. My grandmother didn't put onion in to accentuate the pepper flavor a bit more. Also, IIRC, only green peppers were used sometimes as well.

@@GrandmaFeral As someone who's been (mostly) vegetarian since 1991, I can attest to that, dear Grandma Feral -- not only that, but if one chooses the right combinations of grains and legumes, one will have complete protein without requiring eggs or dairy to supplement, and have saved a ton of $ and cholesterol in the process.

eggs are always versitile cooking ingredent if you have them...its the reason why people in the countryside[and even in the towns] had a steady food supply...i remember my grandafther talked of when he had his own animals & vegetables in the backyard....its a art most people have lost today

Come to the south, this is still the life in many places. I'm lucky enough to have a lot of family that have huge gardens and I get plenty of fresh local organic produce delivered year round in the city for about $30/week from The Produce Box. The South is all about fresh homegrown food. Just be sure you ask if there's pork in it first if you want it healthy or vegetarian. 😂 I'm a long time vegetarian (I just don't enjoy meat or factory farming practices) but all my cousins and uncles hunt, fish, and farm their own meat as well. It's a good practice, much better than the stuff in the store ethically and health wise. And it helps their farming neighbors keep their crops as deer, birds, and bears can destroy a whole field in days. I have some family members that literally could not afford to eat if they didn't grow/raise it themselves, but because they do they live in abundance. It's quite admiral to this city girl. And reaping my benefits of fresh jams, pear preserves just like my granny made, fresh eggs, etc doesn't hurt either. They also share and trade with neighbors who live the same way. It's a nice life.

Mmmmm that looks yummy! It would be a great meal for any time of day...maybe even a more "American" lunch or dinner! I'm going to try it with olive oil substituted for the pat of butter and add a minced clove of garlic or two toward the end of the vegetables saute time. We live in the Bay Area and can get old San Francisco style Sourdough bread. Oops, I'm drooling...must go cook! Thanks Grandma and taste tester Grandpa Feral! 💕

That looks fantastic, thank you. The basil and Italian seating sound like a good addition. -- This is almost a country omelette or like a frittata. Some nice Italian bread and mmm. -- I've just realized I don't know enough about Italian cheeses beyond the usual suspects, Parmesan, Romano, Mozzarella, Provolone, but there must be many more good cheeses from Italy, Sicily, and Syracuse.

I have not had this in years due to the sodium in the salami. We are having another rainy day today after a rainy weekend. Hope your weather is much better.❤️Grandma👩🏻

The Italian seasoning must have Fennel in it more than likely. As we had some Italian Sausages tonight and they had Fennel in them. We get the best Italian Sausages from our Butcher down the street. The Sausages are just not cheap at just over a dollar each though. Those Egg sandwiches look very good though. Unfortunately though Mr 17yrs does not like peppers or capsicums as we call them here. My Mum eats peppers/capsicums nearly every day though so she would most likely like this. Also my Mum loves Bread too. I will have to make this for her sometime. Was the bread toasted? I'm a little bit hard of seeing some details now unfortunately so. We are very lucky too to get lovely fresh bread from where my Son works at a very lovely bakery. I am going to try and bake some savoury muffins over the weekend and some brownies as well for school lunches this week. I made slow cooked lasagne yesterday and chicken mince sausage rolls today. Starting to do a little bit more baking now and get back to basics a little bit now. Loved this video. Thank you Grandma and Grandpa Feral. Lotsa Love from AustraliaXxxOoo We are going around to my Mum's place on Sunday to have Corned Beef fritters as ever since I burned myself making them I have been a little bit scared of making them again and Mr 17yrs loves them. I do not like cooking where you have to place things in oil much.

Hi Megan Yes the bread is toasted. It's nice your son works in a bakery. They sell delicious bread. Your Mom should like the sandwich. Your slow cooked lasagna and chicken mince sausage rolls must be yummy. Glad you are doing some baking. Nothing like homemade baked goods. Have a nice Sunday at your Mom's. I have never had Corned Beef Fritters. I will have to look up the recipe. I don't do a lot of frying with oil but I know you have to be careful. I know you will be fine making them again. Love Grandma & Grandpa.

Born n bred NJ of Italian descent. Growing up, this was pretty common fare. We also did potatoes and eggs, just skip the peppers and used sliced new potatoes that you sauté.

Add cheese and ya got a omelette! I use the same stuff only wrap mine in flour tortilla shells and fry them off for lunches for work. They freeze well to. 😋

If one pad of butter makes it good, why not put two pads of butter? It looked like it needed a just a little 🤏more butter. :) and then it would be great!

If you add a chopped tomato, it becomes a Mexican recipe. Might want to use a roma tomato, less juices. Delicious indeed, also with some warm tortillas. 💖😎 You could also use spicy jalapeño or serrano peppers, if desired.

My mother always made those and called it a "WESTERN!" I think she was a Texan at heart, as she would make hambers with green peppers, onion and lettuce and call it a "TEXAS BURGER."

My dad is half Italian and he makes this all the time. He usually prefers the green peppers, and he doesnt use onion, and he scrambles it rather than making an omelet. And the weird thing is I was just about to watch this video and he asks me if he can have some of the peppers/capsicums I bought so that he can make some chilli and egg (that's what he calls it). So I had to watch this with him 😀

Italian seasoning? Yuck. That would ruin the natural taste, but a good Italian black pepper & sea salt.. yummy. My mother often used jar peppers when she didn't have fresh. Thanks for the memories.
