Absolutely beautiful moist and fluffy cake! I made half the batch for a bundt mold I have since I wasn’t planning on filling. So I did 30 minutes baking instead of 40. With organic soy milk and safflower oil and white unscented sesame oil that I had on hand. And half reg fine flour and half rice flour. I’ll be adding a little coffee next time. I drizzled vegan chocolate on top, so it became crispy when cooled. I served to my husband and he loved it and couldn’t believe it was vegan after I said it when he had finished his first slice 😂thank you so much will be using on cake occasions!!! Ultimate 🙌

I made this with my stepdaughter the other day. IT IS AMAZING. I know I've mentioned this to you before but when she tasted it she was like, It tastes real. *rolls eyes*. I put some in the oven. But 40 minutes was way to long to wait!! So I put some batter in a mug and microwaved it for a under 2 minutes and best decision ever! It's soooo damn good! Awww.... we don't have vegetable shortening at my local supermarket. According to google, I can use copha (hydrogenised coconut oil) instead, but it needs to be melted.

You wouldn't want it to be melted or the frosting will be runny, and you want the frosting to be fluffy. If you can't get your hands on vegetable shortening, I would use all vegan butter. You may need to omit the non-dairy milk, and keep everything cold so it doesn't get melty. Enjoy!
