I just had to let you know that this cake is delicious, moist, and has a texture like a cake made with eggs and milk. I am so impressed, so thank you! I thought eating as a vegan I would never be able to find a cake that had the texture I was used to before going plant based-this is it!!!!! I did change one thing, and it was using white distilled vinegar instead of the lemon juice or apple cider vinegar because that is what I had on hand. Once again thank you soooooooo much!

Can I just say having now made your recipe, that this cake is right up there with Isa Chandra's vanilla cake and hers has been my go to recipe since I've been vegan, about five years. I baked this for my birthday!! It was so good! My brother, who is very critical of my baking, went in for seconds! I made a few changes though... Only because my fam is asian and western cakes are too sweet for them... I only added 1 cup of sugar and instead of 1 1/2 cup of milk I added 1 cup milk and 1/2 cup whipped aquafaba. And for the Icing I used a flour paste/butter cream recipe

Hi Sam! We had a birthday celebration on my job and prior to the celebration I tried to find a bakery which made vegan cakes, without success. I saw your recipe and decided to give it a try. I always use light olive oil in my cake recipes. There is no residual olive oil taste, and it works wonderfully. I also never use Crisco because it is a trans fat. There are non-hydrogenated shortenings available which makes them zero trans fat, such as Spectrum Naturals Organic Vegetable Shortening, and that is always what I use. If being vegan means helping you be healthy, then these substitutes are the healthiest ones, and they work. Although I entered this as a reply to one of the questions here, I thought it was important enough to add as a comment.

Oh man am I happy I found your recipe. I've been looking for a vegan caramel cake and was unhappy with everything I'd tried. In the end I decided to just create my own from a vanilla cake base. I took this recipe and swapped the sugar out for 1/2 cup of date syrup and 1 cup brown sugar, and I used 'so goods' date and almond milk for the non dairy milk, And it made the perfect caramel cake.

I made your cake on Friday and followed it to a T. It's very moist and tastes good, but definitely too much acv. I general use 2 tsp to help with the baking soda/powder action. The people I served it too said it didn't taste like a vanilla cake.

I think that's because its the British pronunciation. It reminds me of my Grandma's cake - we called it a log cake (I have no idea why). We made it a birthday cake by adding cocoa to half the cake mix and then swirling it in the tins. White icing, and then melted chocolate on the top. It's still my favourite cake.

I tried your recipe and it was very good. I used apple cider vinegar and there was definitely a taste left behind. We could all taste the apple cider vinegar but it was still enjoyable. Next time I'm going to try lemon juice and see if that will make a difference.

I made this cake and the texture is perfect as well as moist! I’m not a huge fan of the flavor and I used great ingredients. It just doesn’t taste like a great vanilla cake even though I used a quality Madagascar vanilla...but it’s still a great moist and fluffy cake.
