Made this last minute Thanksgiving Morning, chilled and served right before dinner and my family and myself DEVOURED it in minutes. We served it with homemade spicy jelly and OMG! I’ve gotten so many requests for it to be served at Christmas as well. Gonna make 2 this time! Thanks Sam!

Ok I know I’m a little late to the party but it’s two weeks before 🎄so I thought I’d give this a try. I made some notes of my experience: 1. Sam I’m glad you openly admit to liking your own vegan cooking over store bought or even restaurant fare. Every once in a while I feel the same way but I don’t usually share this with friends or family. It’s a very good thing actually, very empowering. 2. I buy my cashews in bulk, 10# at a time, and they come in pieces. I wasn’t so thrilled about this but now I realize they process 2x faster so I’m happy 😊 3. When I started up my food processor the mixture seemed way too thick so I added about 1 Tbsp olive oil. 4. My food processor (Cuisinart Pro Custom 11) made a weird noise after a few seconds, sort of an unbalancing thing or whatever. So I wound up stopping it, scraping the bowl as you recommended, and repeating this a lot. Much more than 5 minutes but I’m all about the creamy. 5. I refused to pay $US 2.50 for a tablespoon of fresh thyme so I used dried. I tried pouring it in from the top a la emulsifying but it didn’t incorporate well. Better to sprinkle it on as you did. 6. Eventually I found that short pulses smoothed the mixture best. I’d pulse, the cheeze would slowly topple onto the blades, then quickly pulse, repeat. 7. I’ll be serving this cheese ball to my friends around Christmas so I can definitely see where the beautiful green of fresh thyme, combined with the red cranberries, would look so much more festive than using dried thyme. #LessonsLearned 8. “Lumpie bumpies” lol 😆 9. I actually had dried cranberries in my cabinet but was wondering if, like the thyme, they should be fresh. But no, from your vid and pics they look fresh (?) 10. My goodness Sam you’ve become quite the food photographer! 11. Thanks for all the closeups in your vid and pics. They really help. 12. Love the crunch when you bit into the cracker (at first I thought they were slices of French bread). And Chickpea... well 💕❤️🤗 13. Has anyone actually made it this far? Lol

I'm vegetarian and I like to experiment with vegan food (just waiting to move out of my parents' house to make the transition haha) but I find it really hard to find store-bought vegan cheese that doesn't taste weird. I tried to fool myself into thinking I liked it but they just don't appeal to me at all. I'd much rather eat less cheese and really take the time to make my own every now and then, so excited to try this one !

Zee It adds depth of flavor and umami. You can leave it out but the cheese probably won’t taste as good (everyone’s tastes varies).

I think it's too thick for a blender and would be difficult to blend. You could give it a go, you'll just have to scrape down the sides a thousand times.

Wow!!!Maybe I should try this recipe and it looks fantastic and but is my suggestion is to save time. Everything you did there looks great but instead of putting one cranberry at a time why not put a handful of cranberries in one bowl and roll it on the cranberries like coating a batter before deep frying?

It might be pertinent for some to note the tip on preparing the cashews: SOAKING them, rehydrates them. If you prefer to soften them by boiling, you're COOKING them. These two methods affect the intrinsic dietary and nutritional qualities of the cashews. If you're concerned about the nutrition, soak, don't boil. If you soften the nuts by boiling, given that you then need to heat the mixture, you'd be effectively cooking them twice, reducing their nutritive value again. It may seem picky, but to some it might be an important matter. Just saying. Me? I don't mind, but I prefer to soak. I like to take the time. We're always so much in a rush, hurrying everything up and doubling the speed. Soaking them means planning ahead, and enjoying the process at a leisurely pace. I made this but put the cranberries into the clingfilm (saran wrap, whatever!) in the mould, before i added the cheese. It worked quite well, but I only put in sufficient to crown the top of the ball once removed from the film. It looked really nice, too! The taste was absolutely divine, as well!!

Wow, OK added to this Christmas' menu. I've never been a big Animal Milk Cheese ball guy, but this looks incredible (and customization - I mean why stop at cranberries, right?) and as some of the peeps coming for Christmas visits are omni's it will be nice to have something else to surprise them with. Two questions: 1: how long will it keep for, you mentioned it can be done a couple of days in advance but how long until it loses its texture or eatability (Is that a word?) #2: When does Chickpea get their own youtube channel? ;-) Thanks Sam.

With my food processor _immediately_ after I turned it on the cheese mixture spread to the sides and bottom so there was little processing happening. So I scraped and pulsed, scraped and pulsed... kind of a pain but I can’t really afford a better food processor. Hth

I live in Queensland, Australia, and my coconut oil is melted at this time of the year, even in the air conditioning 😳 will this affect the outcome?

Nope! It's totally ok if the oil is liquid when mixed with everything else. The oil will help set up the cheese in the fridge. The cheese will just get softer quicker when sitting out. Enjoy!

A few people ripped me a new one and made me feel horribly bullied on KZbin because I said perhaps you would want to add some lemon juice to give the Tang of real cheese. These people did not think cheese had a tanginess! So for that one sentence I was bullied by vegan adults! I have been vegan longer than any of them and it doesn't matter cheese does have a tanginess and if you don't add that your end product is not going to taste like cheese.
