Cashews are definitely expensive. Easy to turn into stuff, but it gets pricey. I'm excited to try these cheeses.

Christina Mata I won’t buy cashews because the workers who process them suffer horrible burns from the fluid between the outer casing and the nut, they get payed so little and most have never eaten a cashew themselves as they are so expensive.

I buy them in bulk 10# bags and that cuts the price in half.

I'm most excited to try the feta; Violife's is identical, IMO, to a young Cretan feta made in a monastery that I tried many years ago, but I do miss the texture of the zesty, crumbly kind that is more common. These all look delicious and easy to make; TFP!

I really appreciate this because I'm trying to stay on the no oil vegan path. All processed cheese have oil that I can see. I'm leaning to make my own sour cream and ranch dressing. I enjoy that they are less processed and less expensive. These are the 3 cheeses I would use the most. Thanks again!

If you put that mozzarella into a piece of plastic wrap, you can hold both ends and twist until it forms a ball, then drop into ice water for a minute until cooled and remove the plastic wrap.

The thing that is great about your recipes is that they are not only cheaper and might taste better, but they are actually providing some nutritional benefits too. Many of the vegan cheeses not only taste bad, but they provide no nutritional benefits. Even normal pizza provides some nutritional benefits (not healthy by any means, but it has vitamins, minerals, protein etc...). Don't get me wrong I love food that tastes great, but I like to at least get something out of it even if it's not "healthy".

Tofu is really cheaper and it works just as well. I tried the nacho cheese with both tofu and cashew nuts. No substantial differences. The only downside is this cheese doesn’t taste nice after a day so it’s best to make just the amount you can consume within the day.

It was made from nuts, but if you love camembert and crackers like I do (can you say..addicted??) it might be worth the effort. Do you think there is a way to make a camembert style cheese from tofu?
