Great videos man! Me and my wife spend 2-3 weeks in Guyana every year! We have been doing this for 20 years. I love the culture and the people. I really love the food and the freshness of the local produce. I have even learned how to prepare and cook certain curry dishes and veggies. my wife can also cook roti. But one thing I just can't eat is Baigan Choka! I can't get past the texture. But hey brother, watching your videos make me feel like I am in Guyana even though I am in America! You speak with a lot of encouragement to your people especially the men. Keep up the good work man. I spend most of my time in Corriverton, Skeldon. But if I come to Georgetown, hopefully I can look you up. God bless man!

My parents were born in Fiji Island's & came to the States in late 60's & early 70's. My mom use to make some awesome baigen choka & aloo choka with roti! I really enjoyed watching your video, it brought back great memories!

Really nice dishes .... guyanese style. Can't beat guyanese food and twang ; >) I do the same thing here in Canada but I use a cast iron pan ( just like the one you bought) and seasoned it for non-stick. Mostly we don't use the microwave anymore (bad for your health in the long or short run) I use an overhead oven. Non stick pans has a coating that contributes to cancer. Just a heads up.... for what happen to someone else does not mean it will happen to another. Cheers on a good video.

In addition i usually sauté the onion in some oil prior to adding to the eggplant.. and if you want to up the game add a few fennel seeds like you would in chonkay dhal ..

Baigan choka is like a Indian dish .We add curd or milk cream in baigan and call it baigan rayta or bharta.You prepare it with curd or cream and taste it.

We were all taken from Bihar & Uttar Pradesh by the colonial masters in the 1800’s to work as indentured labourers on the sugar, cocoa & coffee plantations & almost 200 years later and we are still here preserving our heritage, culture & foods as Indo Caribbean’s.

You ain't kidding bro I went back to Guyana after 20 years and that's what I was craving. It's something to do with the roasty toasty flavor from the fireside I think. The charred bits of tomato and baigan packs a flavor punch and the crunch is magical when you saykay the roti over the fire., soft inside and crunchy outside. I usually do this on the grill but I add whole geera to the oil before mixing it up. Priceless stuff. 👍
