First, let me assure you that your Hindi has no problem. Really. And secondly, the strength and beauty of your tutorial lies in that brilliant balance you struck between - technical detail and casual-friendly mannerism & flow. You look serene and beautiful and you sing very well. And lastly, there is one technical question - Is it that the alcohol % has to be necessarily between 6 to 12 for second stage of vinegar to take place? In some video, the tutor told that the bacteria fails to make vinegar if the ABV is less that 6 or more than 12.

It’s 7 am, I just woke up and saw your comment ◡̈ . Your comment made my morning , thank you so much for those kind words ❤️. Now coming back to alcohol . Our objective is to make good quality vinegar . When we say good quality we are referring to the benchmark 5./. acidity strength . Because only with 5./. acidity strength your vinegar will be able to kill bad bacteria germs successfully. Many people think if the vinegar ph level is low they got good quality vinegar which is not true . You can get Low ph level vinegar but that doesn’t mean it has 5./. acidity strength . We can’t check vinegar acidity strength with PH strip or PH meter . We need to do vinegar Titration which you can only do in a lab most probably . Now to get 5./. acidity strength we need ABV atleast 8-10./. . If the ./. is below 6./. you can still get vinegar but the strength will be not there . And with wild yeast ( natural yeast from fruits skin and from air ) it is unlikely you will get 10-12./, ABV . To get that much high ABV you need to use commercial yeast ( brewer’s yeast not baker yeast ) . And yes its better to keep ABV below 12./. as it might be difficult to get vinegar with high ./. of alcohol, it might kill acetobactor . So far it is known that only some kind of acetic acid bacteria can survive in above 12./. ABV but they can’t survive above 15./.. So in short most of the home made vinegar don’t have 5./. acidity strength that’s why I recommend them to keep in fridge to avoid spoiling. Hope I am able to clear your doubt◡̈ . I am that kind of person but I rarely come across such technically keen answers, especially from the people of my own country. It is a great help at practical level to know these two facts - 1) ABV% of alcohol should be 10 to 12 for optimum results. 2) Without surety that acidity of the vinegar is 5%, it is vulnerable to spoilage and should be stored in fridge. I am no maths guy. But I wonder if there exits any mathematical equation for finding acidity strength from ph value. I will search and study. If I find anything useful, I will let you know. It felt really nice to go though this discussion with you.

Thank you for asking questions, most of the people don't want to know technical stuffs or don't want to go deeper so I try to keep it short to avoid making my subscribers bored . Nice talking to you too. Now coming back to the technical stuff :) There is a relationship between PH level and acidity level (inversely related ) but it's not black & white . Some vinegar has 2.5 or 3 or 3.5 PH level but all of them might have 5% acidity ( 5% acidity means in 100 ml 5ml pure acid is present) so it's hard to establish exact conclusion or a math equation though there is formula present if I am not wrong. I am not a math guy [(professionally a CA:)] either but it's more from chemistry than math, as fermentation is a chemical procedure . Acid can be weak or strong and acetic acid is considered weak acid. So what I mean to say is there is a relation btn PH level and acidity strength but they are not interchangeable . Acidity measure is more technical and complex that's why need to do vinegar titration to know the percentage of acids present in a liquid because acid is a chemical compound . For example if you take 5% of one weak acid and 5% one strong acid their PH level will be way different . Even with 5% of same acid PH level will also vary mainly because of other compounds present in the vinegar . Those compounds will impact your titration result hence vinegar strength figure. Not sure if I am able to explain or not, but would suggest read and understand the process of vinegar titration (CH3COOH + H2O → CH3COO- + H30+) and acidity strength measurement or check with chemistry guy , I could be wrong too.
