I was a little afraid to do the ACV due to its effect on potassium levels. I take BP med, and I notice I don’t have the heart jitters when I eat avocado, sooo. Ii don’t use kombucha all the time, but I used it to break my various serious sugar addiction. To set my gut straight. Very , very, helpful.

We take 2 tbsp of Braggs ACV w/ mother in 8oz of water before meals and bedtime. Both my me and my wife’s blood pressure was normalized after about 4 weeks to the point where we had to stop taking blood pressure meds. Doctors were suspicious but now have agreed that we don’t need the meds anymore. Also helps with many other things.

I want to clarify the broad statement of "Sugar is sugar". There is a major difference between glucose and fructose when it comes to their metabolic pathways. Fructose can only be metabolized in the liver, thus contributing to fatty liver disease via lipogenesis. Glucose can be metabolized by many different cells in your body. It can raise insulin levels, but it will not damage your liver like fructose.

Praxis....most people have no clue of their total intake of all types of processed sugars in a day.... they don't read labels, have a sweet tooth, or don't care....there has been a huge increase in obesity & insulin resistance from constant over production of it leading to T2 diabetes....sugar & simple carbs cause fat gain not healthy fats....the low fat diet was a dis-info narrative taught for decades because we now know healthy fats are vital & can help with weight loss.

Don't need to buy any more expensive cambucha, kefir, yogurt or probiotic supplement, just obtain a bit of probiotic bacteria, as many different kinds as you can get from probiotic supplement, kefir or yogurt, mix into fresh whole milk (skim milk or processed milk may not work), leave in room temperature, have air ventilation for the milk, as the bacteria feed on the milk sugar (lactose) they produce waste gas which can build up if milk is in a sealed container, leaving the cap off the milk carton or bottle so gas can escape. Depending on the room temperature the milk should be fermented by the bacteria and turn gooey in a few hours, may take many more hours depending on the temperature, the warmer the faster the milk gets fermented. The milk turns gooey thick but it doesn't smell bad, if the milk smells foul and tastes very sour then that means the starting batch of probiotic bacteria weren't live, they couldn't do the job but letting the milk turns bad, throw away the milk if it turns bad. When the milk is properly fermented by the probiotic bacteria it should taste like kefir or yogurt, put the milk in the fridge to slow down the fermentation process, don't over ferment the milk because when all the lactose is eaten by the probiotics the bacteria start to die, so leave enough lactose in the milk for the bacteria to keep feeding on while in the fridge. Properly fermented milk with live probiotics in it can be in the fridge for at least a month without turning into sour bad milk, the probiotics suppress the bad bacteria that cause milk to turn sour and smelly. If the fermented milk separated into water and milk solid that means the bacteria didn't have any more lactose to feed on, the fermented milk becomes like cheese, it is still edible just like cheese. The water is called whey. Add in fresh new milk to the fermented milk in the fridge once every few days to supply more lactose to the probiotics which they feed on. Or keep refilling the original fermented milk with fresh new milk as it is consumed, this way you never have to buy any expensive probiotic supplement, kefir or yogurt again. This can save you tens of thousands of dollars in your lifetime, and you get the real live probiotics. Find as many different kinds of probiotic bacteria you can, there are at least a few dozen different kinds in the guts. Once you have them you are set for life by using this method.

little anecdote. I was visiting my friend in early May. He showed me a patch of grass in his yard that was visibly thicker and and greener than the rest. It turns out that his motherwas making kombucha but she decided to quit and she spilled the tea in which fungus was in the grass and you could clearly see line where it was spilled. He said that since than grass on that patch was growing almost as twice as fast compared with rest of yard and also all sort of mushrooms was popping up there. I dont know what nutrients in had but definitely something was working out just great for plant life .

Fungus is a keystone species in the soil you can't have healthy topsoil without fungus. The mushrooms are the fruiting bodies of the fungus in the soil. Fungus break down the dirt in the soil to make minerals available to the plant the same way they work in your gut.

Great Video Doc, I make my own kombucha using green tea and black tea the first fermentation is usually around 7 days and the 2nd fermentation is the same usually around 7 days, so I only use 1 cup of sugar per gallon of tea and on the 2nd fermentation I use a 1/4 cup of juice added to 12 to 16 ounces of tea according to what size bottles I use, the juice is usually a organic juice with ginger, my favorites are Beet juice, carrot turmeric and ginger juice and ginger soother juice, my Kombucha is very carbonated and its all natural carbonation very much like ginger ale I make 3 gallons a week and I share with my friends some of which had IBS and other digestive problems and they have all told me they feel much better, I personally drink a gallon or more of kombucha a week and I feel great Im 57 with no health problems so I believe when making a comparison video of the 2 it would be interesting to know the benefits of the healthy juices that are added to Kombucha like ginger, turmeric and beet juice, thanks again Doc !

I've been making my own for a few years now. It is time consuming (I drink it a lot), but very rewarding and hence, well worth the effort. I do first fermentation with Pu-erh tea for 14 days, and the second with various combinations of added liquidized fruit (pineapple is my favorite). That added mixture represents less than 10 percent of the final volume and it ferments for 3-4 days.

I usually only use black tea with raw cane sugar, but I ferment mine much longer, a minimum of 3-4 weeks and then when I do the 2nd Ferm, I put in fresh raspberries for 3 days before straining out the remnants of the raspberries... it's delicious. I also love taking the ACV in warm lemon water in the am and at night.... I'm just getting back into the booch process and looking forward to it :) can't wait :)

I have a question for you Doc. In terms of benefits from either of these products, is there a danger with regards to cancers in the body by adding acids to the bloodstream. From what I've read a higher PH in the alkaline is supposed to help stop sugars from fermenting in cells and prevent damage and/or proliferation/growth of tumors. So can there be a downside to these products for Cancer patients?
@a2thek914
@a2thek914 Жыл бұрын
The tsp you need for its health benefits won't affect your blood PH by any noticeable margin. Best lay off the actual junk you consume than be mindful of the low amount of ACV you need to consume. The body regulates the PH in the body in a very strict fashion. It will draw minerals from your teeth and bones, so load up on minerals if you'reworried about acids in your bloodstream 😂

I am making water kefir since August 2021 and today is May 2022. I did not drink it for a week when I have lost appetite (when down with Covid). I would say water kefir is similar to kombucha regarding sugar (Dr. Ekberg suggested to buy tool to measure the sugar - that is a good tip). Water kefir is better tasting, however. When I have started, first 2 weeks my bowel movement was irregular, after that came back to normal (I was going sometimes twice a day to toilet). I leave 1 litre glass jar overnight filled with water (hard London water) to lose chlorine. Next day I prepare my new batch with 60 grams of water kefir grains, 60 grams of sugar (I mix it with light brown, muscovado, dark brown, white...) - depending on the grains. When they are fed well, they are small like rice and dark colour. I have managed to starve them during winter and they turned translucent and grew big in size. Sugar is dissolved in a 1.5 litre jar (leave space for the magic to happen). I add 2 dry figs (make sure they are not with preservatives) and a 5 dry raisins (no preservatives, dark, big sultanas/ raisins). Figs and raisins are in a bowl of boiled water for 5 minutes before they join the kefir. I add some lemon juice from a quarter of lemon (buy unwaxed, unwaxed is best same like me - unvaxed). Depending on the weather, but I like to keep it longer. My best tasting kefir is 1 day with the jar open and covered with cloth, then 1 day the jar is sealed tight. I strain it into bottle with beer/ wine graded stopper and keep it out for one day. After that goes into the fridge. I have left the kefir in the fridge for 4 days and it tasted heavenly. I guess more days in the fridge matures it nicely. I usually use some of the freshly made kefir, like 50 ml to make the new batch. Here is a summary: Water kefir you need 1 litre water dechlorinated by 24 hours on air 60 g water kefir grains 60 g sugar (muscovado is good, add some dark brown or white) 2 dried figs, 5 dried black raisins (no preservatives and washed in boiled water) quarter of lemon, squeeze juice in and lemon peel will add flavour (unwaxed is best) small cup of previously made water kefir (I am not sure why I add it, but the kefir just does not fit in my fridge bottle which I fill 0.9 litre full to keep some space for the pressure build up) Little tip, I rinse the grains after straining under running tap water (apparently it improves flavour of the next batch). However, adding previous batch half a cup of kefir messes it up a little. Flavouring of the fridge bottle, I have added dry cranberries for the 24 hour period before going to fridge, tastes nice. Do your own experiments, it is fun. Some add ginger, frozen raspberries, dry mango, or even honey. But my usual flavour is lazy way, I add to 3/4 of the water kefir glass 1/4 of coke or lemonade bought from the store and drink it that way. tastes like coke or lemonade with all the goodness.

This video touches on a related food that I've been questioning, and that is charcuterie (dried fermented meats.) From what I've gleaned most meat sticks, slim jims, pepperoni, most jerky; all have sugar or dextrose added. The curing process utilizes different bacteria and molds to give the product characteristic flavors and textures and prevent overgrown of harmful bacteria. My question is how much sugar is left in the finished product? Is the labeled sugar content what went in or what's left? Are these cultures beneficial to gut health or not? And of coarse the elephant in the room...nitrates? This would be a good topic for a future video

I've been making kombucha for about five years and recommend a second fermentation with either 1/4 c fruit syrup saft (found in Eastern European grocery stores in wine bottle size for about $5 or fresh berries (about 5 raspberries or blueberries) for a 1.75 liter bottle (source: IKEA). With the syrup I also use the "mother" from organic vinegar, which I leave at the bottom and simply refill. My fermentation is about 3 days for the first (open) fermentation and one-three weeks for the second fermentation, which makes it as naturally carbonated as any soda pop. I realize that the end result is still sweet, but I typically only drink a cup a day. The caffeine content which you did not mention is also worth taking into consideration, since it all remains during the fermentation process.

Great video; I've learned sooooo much from your videos. Thank you. I've been making kombucha since early last year, so that I can control what goes into it: no added fruits or other flavorings, no preservatives or pasteurization, and I double-ferment it to the beginning-to-pucker-my-mouth stage. I'll have to try the brix meter so that I can quantify that sugar level. One other thing: I use dextrose (glucose) rather than sucrose (table sugar, which is half glucose and half fructose) in order to eliminate the fructose altogether. The SCOBY seems to be just as happy to work on straight glucose. Edited a few days later: I did order a brix meter. My kombucha comes in at #4. That seems to be the level that I like -- on the tart side.

Another wonderful video! I keep a 2.5 gallon crock on top of the fridge for a kombucha continuous brew system where I can pull 1-1.5 gallons a week off with minimal effort. I time the draws depending on the objective for the bottling with early draws to allow fermentation with low sugar flavorings such as ginger, hibiscus flowers, cayenne, or tumeric. If I'm adding fruit or berries, then I will allow a low sugar draw for blackberry, raspberry, blueberry, apple, or grapes. A hint of vanilla, cinnamon, clove, anise can be fun too. I bottle back into 16oz big brand bottles checking for swollen caps or a baby "jellyfish" before placing in the fridge. Bear in mind that a cup of initial sugar/gal is being converted into the desirable elements by the yeast and bacteria into a concentration that can be drank in volume rather than by spoon. While a cup of sugar might seem a significant amount, the process is also converting much of it into cellulose as the structure of the scoby. They make a fun, wet frisbee with the right crowd!

If one wants benefits close to or exceeding the research or the claims on Kombucha, one almost has to make their own kombucha or get it at an actual kombucha brew pub that has an alcohol license. The reason is that any store bought kombucha is made different than home kombucha to keep the alcohol levels down. Legally, it has to be less than 0.5% but most kombucha is around 1% to as high as 2.5% alcohol and higher if one is intentionally making hard kombucha. In the process of reducing the alcohol they either ferment it differently, usually at lower temperatures for longer periods of time, or they put it through a process that evaporates alcohol out of it and in either case you will end up with less probiotics, and less acids, along with less alcohol. Then on top of that, a lot of brands intentionally bring their acid levels down even more because they want to sell a sweet or bitter kombucha and not a sour kombucha because a lot of store bought kombucha drinkers don't want it to taste like vinegar and a strong acidic kombucha usually has a bit of a sour vinegar taste to it. For anyone wondering, my info comes mostly from research I've done and partly from personal experience making my own kombucha and jun, which is what most of that research was related to.

Question on added sugar vs natural occurring: Is one more harmful than the other? I currently have a serving of frozen blueberries a day which notes no added sugar but does have sugar in it I am assuming in the blueberries. What is your take?
