Thanks Shifu for sharing. I have been searching, googling and studying HK Style Radish Cake but doesn't turn out like Dim Sum restaurant. Can you kindly share 1) Ratio of Rice Flour to Wheat Starch, 2) Ratio of Flour (base on total or rice flour only} to Liquid. 3) Also, would like to know 900g of radish before peeling or after peeling. Why some use wheat starch with rice flour only, some use cornflour with rice flour only and some even use both cornflour & wheat starch with rice flour.
