I thank you and commend you for making this video with clear and concise measurements. I have begged the best of bakers for years to share their recipe for this great cake and no one ever would. I figured it's bc most just go off taste and knowledge so they don't necessarily measure everything idk but I think to carry on our great traditions with the younger generations,we have to teach and share openly. Many ppl especially us Caribbean folks don't bother with measuring 😄 I try to keep measurements so that my kids will have something to keep the traditions alive if I'm not around. Measurements also ensure consistency 💙

I find Red Label wine to be unnecessarily expensive, so I do instead use a port wine such as Mogen David or Manischewitz. I also add breadcrumbs, to make lighter. I no longer like the heavy, pudding-like consistency. I have my fruits soaking and all the ingredients waiting for me to start my baking, maybe this weekend. I LOOOOOVE our Christmas cakes, including eating the leftover mixture from the containers after the cakes have been put to bake...😋😋😋

Girrrrrrrrl. I just tried this recipe and it’s the best damn Christmas cake I ever had. I used different proportions for the granulated sugar and brown sugar because I ran out of granulated but girrrrlllll this turned out so good. I left out some spices like the almond essence, molasses, cloves and coriander. I also used tangerine juice and rind because I had no lemon 🙃🙃 but either way this is a sound recipe.

Instead of parchment paper, you can buy the product called "cake release," is available at the stores. Also, you can use lime as well, definitely do not need the breadcrumbs. Very nice video 👍

Mixed Spice is usually added to Fruit/Christmas cake. I have no mixed spice at home so the spices I've used in this cake are those usually found in mixed spice. Coriander is one of those spices.

Do you use fresh cherries, or do you use the maraschino cherries with the red dye that comes in a glass bottle? I'm addicted to this cake, so when it's in the house it goes quickly. I haven't made or eaten it in around twenty years. I have to cut way back on the sugar, though, since the amount of sugar in the recipe is usually too sweet for my taste. It's a good thing that I work out regularly and don't eat junk food, or I would be a big girl.
