To get the cake to cake rather than the pudding texture how the mixing texture must stay thick are not too thick and not too running

I thank you and commend you for making this video with clear and concise measurements. I have begged the best of bakers for years to share their recipe for this great cake and no one ever would. I figured it's bc most just go off taste and knowledge so they don't necessarily measure everything idk but I think to carry on our great traditions with the younger generations,we have to teach and share openly. Can't wait to try this.

Many ppl especially us Caribbean folks don't bother with measuring 😄 I try to keep measurements so that my kids will have something to keep the traditions alive if I'm not around. Measurements also ensure consistency 💙

Thank you for being clear and even showing how you cut the parchment paper. And tapping the pan to level it! I was never shown that technique and always wondered how to get it smooth on top. Great tips!

Girl I just made mine, I just grate the rind of a lime, that always take away the egg scent or taste,,but can I tell you the consistency is the bomb! I’m soaking up all the rum and wine, updated after I cut,, Thanks a million, you rock

OMG! Jerene girl you did it again 🤗! This cake recipe and instructions were clear, easy to follow and my cake came out ‘Absolutely Perfect’. The almond essence and lemon zest/juice really made a difference. I absolutely love this cake recipe. Keep doing what you do, I greatly appreciate this and many of your other recipes I have tried.👍👍👍

I used the whole bottle of rum and wine in the soakes fruit is that bad. Also should I blend them with all the wine?

The last time i visited the UK i saw shells selling for cake tins various sizes. It sits in the cake tin just pour the cake mixture in and bake easy peasy

For this cake did you only use all purpose flour or did you use breadcrumbs as well? I see the breadcrumbs in the recipe as well

We 🇯🇲 call it the eye and other folks call it the chalazae. In other cultures they call it other things.

I find Red Label wine to be unnecessarily expensive, so I do instead use a port wine such as Mogen David or Manischewitz. I also add breadcrumbs, to make lighter. I no longer like the heavy, pudding-like consistency. I have my fruits soaking and all the ingredients waiting for me to start my baking, maybe this weekend. I LOOOOOVE our Christmas cakes, including eating the leftover mixture from the containers after the cakes have been put to bake...😋😋😋

Girrrrrrrrl. I just tried this recipe and it’s the best damn Christmas cake I ever had. I used different proportions for the granulated sugar and brown sugar because I ran out of granulated but girrrrlllll this turned out so good. I left out some spices like the almond essence, molasses, cloves and coriander. I also used tangerine juice and rind because I had no lemon 🙃🙃 but either way this is a sound recipe.

Instead of parchment paper, you can buy the product called "cake release," is available at the stores. Also, you can use lime as well, definitely do not need the breadcrumbs. Very nice video 👍

people cloves is just another kind of spice it is an ingredient in the bottled mixed spice. no one cap fits all.variety is the spice of life.

Awwww sis this was absolutely divine , never heard about adding the coriander at all ... I’m that one person that don’t like a black/ dark brown cake at all ; I know it is gona seem So weird to others but all of us are different 😊lol & that’s fine. Mixed Spice is usually added to Fruit/Christmas cake. I have no mixed spice at home so the spices I've used in this cake are those usually found in mixed spice. Coriander is one of those spices.

Do you use fresh cherries, or do you use the maraschino cherries with the red dye that comes in a glass bottle? I'm addicted to this cake, so when it's in the house it goes quickly. I haven't made or eaten it in around twenty years. I have to cut way back on the sugar, though, since the amount of sugar in the recipe is usually too sweet for my taste. It's a good thing that I work out regularly and don't eat junk food, or I would be a big girl.

Not fresh cherries. Dried fruit are used. It really is addictive 🤣

Either works fine, but cake flour gives a lighter texture which isn't necessarily needed for this kind of cake. I mostly use all purpose
