Raisins, sultanas, currants, citrus peel, sometimes dates in the soak. Cover well with brandy (my mother & grandmother used port) and keep for years if I don’t get around to making the fruitcake. Lots of walnuts, pecans, some mixed fruit and more peel in the batter. More brandy poured on, the cake wrapped in brandy soaked cloth, stored in tight tins and basted with brandy. Hard sauce and lemon sauce on the slices. We took to having it hot, very fitting as I suspect this evolved from an ancestral plum pudding.

It can work, but the baking powder in self-rising flour might be too much for this recipe. If you’re not up for testing a batch, I’d recommend sticking with all-purpose flour and adding the baking powder yourself for better control over the texture. Bless up!

No need to soak the fruits for months.... cover them with your wine and rum add some spices, cover pot tightly and bring to a boil lower the heat and let simmer for about 20 mins. Let it sit for at least a day then its good to go. Taste just like it was soaking for months

No you don't have to soak fruits for months you can even steam it just before baking just let it cool. To get it moist mix bread crumbs with flour don't love it too tough and you can put wine over it after baking.
