Made this recipe twice and a massive hit! Used sweet potatoes and shallots the second time round and absolute delish. Quick and easy apart from the 2hr cook time. Definitely give it a try!!

Just asking... what is the purpose for the initial dry fry? Is it to get it hot enough so that when you add water later, it will steam to cook the veggies?

Nothing really compares to fennel afaik but you could try a bit of anise for a flavor substitute, especially at Christmas time.

You should not put water otherwise there is no way to get vegetables caramelize! Then take out the pork and veggies and put some wine into it. Reduce it. Then put it into bowl if honey and lemon. Brush it onto the pork and place it back to the oven.

I'm not gonna say I had that exact recipe but I tasted potatoes baked under meat like that and they were very far from "the best potatoes in my life". The onions are pretty good though, but they too can be bad if they boil more than they bake.
