UPDATE : I have came back to this recipe and it is soooo freaking good! I made the oxtails step by step while following this video to the T and it is delicious! @@coolingwinds In the food service industry, they highly advise against washing meat as the water that splashes around (on your clothes, on the sides of the sink, the sink bottom) becomes contaminated. Kind of like dropping a stone into a filled, clogged toilet, lol. Plus, rinsing it doesn't get rid of the bacteria. Only cooking it up to temperature will, so it ends up being pointless, unless there's evident grime or worms or something on your meat, or if there's a pungent smell you're trying to get rid of. Although as long as the sink or bucket in question is washed thoroughly with soap and hot water afterward, I don't see anything to be concerned about.

I do the same thing but when adding water, I use a pressure cooker and add ginger. I add the beans when it's almost done and stop pressuring at that time and slow cook! Yummy! Good job! Rep our country well!🇯🇲

Have to comment again. I made this today. Instead of Cayenne pepper I did a mixed blends of scotch bonnet, onion and garlic. I followed everything else to the letter. When I say this was the BEST oxtail I ever tasted...the gravy was savory. The oxtail had so much flavor. When you add the ketchup and the soy sauce mix let it sit for a while. Don't go right into eating it. I can't believe this isn't more famous

I just made oxtails after following a video. It was thirty minutes long and the guy spoke so slowly and for some reason, the screen was black or with still pics. There were pauses where I could tell how much liquid to use. I guessed. So sorry that I didn't see yours first. Your recipe and video looks so easy to follow and you were on point. I put my onions and peppers in towards the end because it keeps flavor more. Oxtails should boil for hours to get tender.

Super nice vid and respect to the chef! I'm born and raised here Brooklyn and I'm part Trinidadian and WE TOO wash our meats before cooking. If you want to save some time on cooking you can use an InstaPot and it will only take 60-90 min depending on the tenderness level you want. Finally for those who say they are expensive, they are not that bad....we pay $6/lb in Brooklyn and my g/f whose from Jamaica told me that price was about the same over there.

I love jamaican oxtails ...And it going to be hard after. I decided to stop eating meat just vegetables and fruits and fish.....But with my new diet am going to treat myself to some of these oxtails maybe once a month.....

I blend my green bell peppers with the whole scotch bonnet pepper and onions to prevent having pepper scattered skins. Also, I like red bell peppers to be added for the last 30 minutes of cooking for more texture and color. I love oxtails!
