In the male-dominated world of sushi, one brave woman broke past the stereotypes keeping women from becoming sushi chefs. Chizui Yuki became Japan's first ever female sushi chef to own her own restaurant. Her restaurant Nadeshico Sushi is located in Tokyo’s otaku district Akihabara where she and her all-female staff serve top quality sushi to locals as well as international visitors.
Shizuka get’s a chance to ask Yuki-san about her life as a sushi chef, some of the challenges she’s faced, and her hopes for the future. She also get’s a hands-on experience making her own sushi! Under the guidance of Yuki-san, Shizuka learns techniques of preparing fresh and flavorful sushi- will her sushi hold up against the professionals?

No, I've never seen it a female sushi chef! But in my own country, I've watched a woman made a sushi in the talk show.

I was lucky enough to have sushi made by Chizui-san when she came to NYC, so I was delighted to see this interview! When I can come to Japan again I'm definitely going to go to Nadeshiko!

Very inspirational, I just love how a chef make a delightful sushi which it looks so yummy that I would love to try it. In fact I've never try sushi before! In my country, I went shopping with my family some years and I saw sushi and I want to try but they can't afford because they don't have any money. What a shame! Great video and great job Shizuka!

I don't think she's the first female sushi chef... Yumi Chiba has worked as a sushi chef for 20 years I think. Chizui is the first woman that owns all-female staffed sushi restaurant.

True, she's not the first female sushi chef. I found Chef Yubako Kamohara who also runs an all female Kaiseki team the most elite type of japanese cuisine. The restaurant is called Tsurutokame, the owner is Chef Osamu Mikuni who wanted to break the sexism in kaiseki cuisine.

I first heard of her back in 2015 and I was able to eat at her restaurant in 2017. It was one the best sushi I've ever eaten. I've been dying to go back to her restaurant ever since.

Japan has always been a male dominated country. Until recently, women weren't allowed to be Buddhist reverends. I always thought that was weird. I'm glad women are making inroads.

Japan.s first female sushi chef ?  違いますよ、昔から女性寿司職人はいましたよ彼女が自分からそう言ったのですか?訂正したほうがよいのでは? それに市場に仕入れに行く女性寿司職人もちゃんといますよ、市場に行くのは彼女だけではないですよ 靴も彼女がどんな靴を履いてたのかは知りませんし理不尽だと感じたのかもしれませんが、市場の床は滑りやすかったりするので安全面とかそれなりの理由があって注意されたのではないでしょうか

every couple of years there's news articles about her. the New York Times, the BBC, & The Guardian ran stories back in 2015 the Great Big Story did a video in 2017 : kzbin.info/www/bejne/hnK0doKPjs2jbZo Huff Post & a few others revisited in 2019 *_side note_* : sadly, the reviews online are not the best. ( when Japanese reviews complain about hygiene & dirt, then you know there's a problem ) there are other sushi restaurants, run by female chefs, that are rated much higher, such as : • *Sushiya* ( 活魚旬菜 寿司家 ) [by Chef Yuki] in Fukuoka, Kyushu • *Uotake Sushi* ( 魚竹寿し ) [by Chef Yumi Chiba] in Shizuoka

I've always known that ingrained sexism is probably the biggest "Achilles heel" of Japanese society (and its biggest wasted asset), but not selling her fish because she's a woman, if I'm getting that right, that'd be unbelievable . Surely it would be illegal, Japanese women are granted equal rights under Article 14 of the Constitution.

Japan is land of contradictions. It is far ahead of other nations when it comes educational attainment, overall societal well being, contributing to our advancement in science and technology. In nearly every way it seems to represent the zenith of human achievement, and yet it seems so backward when it comes to its treatment of women, and the chauvinism that is on display there with regards to which professions they have access to. Usually when you see such markers of flourishing in other nations, the increasing parity of opportunity for women generally accompanies it. This doesn't seem to be the case in Japan. Does anyone have any theories as to why this paradox exists in Japan?

females are still not allowed to step in places like the sumo ring till this day if im not wrong...but they're not the only one, women are also not allowed into mosques in muslim countries.

It's great that you are highlighting feminist issues in Japan and I was really happy you have highlighted this restaurant, as I had heard about it and love hearing about women in Japan breaking down traditional barriers. However to hear you describe the posters at the front as "cute" and the women "adorable" is a best incredibly condescending. If you saw women in other male dominated roles say for example a doctor, you wouldn't call them adorable. Maybe consider your light and frivolous language in future.

It's not a feminist issue. It's not that the sushi industry is rejecting women. It's just that women don't want to be sushi chefs themselves because it requires a long apprenticeship and physical labor. For example, at a construction site, there are basically only men, and I'm like, "Why aren't there any women there?" It is like complaining about. And she talked about not being allowed into the market because she was wearing the wrong shoes, not because she was a woman, but because she was wearing the wrong shoes, because cleanliness is the most important thing in the market, and you have to wear the designated shoes, so if you're wearing the wrong shoes, whether you're a man or a woman, you're not going to be allowed in.

@@asdfghjjhgf it is a feminist issue. The reason a lot of women don't go into male dominated industries is because they are not given room to do so. Many male sushi chefs in Japan have given ridiculous reasons as to why females can't be sushi chefs. men don't want to hire females because they think that they would rather be at home looking after their family, or as one notable sushi chef said "The reason is because women menstruate. To be a professional means to have a steady taste in your food, but because of the menstrual cycle, women have an imbalance in their taste, and that's why women can't be sushi chefs". That is one of the most ridiculous things I have ever heard!! If you don't think that kind of absolutely sexist commentary doesn't make this a feminist issue, then I can't help you.

It’s definitely a feminist issue! Women are deeply criticized, heckled and often straight-up barred from becoming sushi chefs. @Ness G, you make a good point, but I don’t think there’s anything disrespectful about calling the photos at the entrance cute. The previous owner (male) clearly chose photos that featured particularly cute women to draw customers. I don’t think any of them would mind being called cute; they are! And Chizui san is not only a trailblazer and now a successful business owner, she is cute too! And I think she would be happy to be called both. :)

However, when we use these words to describe women who are trying to do their a job in a typically male-dominated industry, we cement the idea that they are an anomaly or unique, which doesn't do much to further the cause. By perceiving things as “cute” or “adorable” we can erase other attributes, like respect and status.
