There is no passion or artistry to this, it is robotic and repetitive. This man does nothing else all day and if he doesn’t do it that way he is fired. This is the food equivalent to tightening the same ten bolts on an assembly line of cars. It is efficient that is all. It takes less time to cook the egg in thin layers than it does to just pour all of the egg in at once and just cook it all the way through.

Thanks for the great video. I bought a tamagoyaki pan when I was in Japan but wasn't too sure of the technique. Now I know. FYI. We used to keep hens in a large enclosure where they could peck at and eat whatever they wanted (as well as the organic chicken feed we gave them). They used to roost in the trees at night. The yolks of their eggs were always much more orange than the ones in the shops. I put it down to them eating lots of green plants, maybe also insects and also that they lived in the sunshine instead of cooped up in cages with artificial light. Don't know if I was right but that's my belief!

This omelette is a Japanese dish known as "Dashimaki Tamago," which contains not only eggs but primarily a stock called "dashi." "Dashi" is a liquid extracted from bonito flakes and kelp by boiling them in water. It is used in various Japanese dishes and is often referred to as the foundation or lifeblood of Japanese cuisine. Reproducing this dashi outside of Japan may be challenging if you cannot obtain bonito flakes and kelp. Therefore, it might also be difficult to completely replicate Dashimaki Tamago. I encourage you to come to Japan and try Dashimaki Tamago for yourself to truly appreciate its deliciousness.

Dashimaki Tamago is it sweet in flavour??
@名無し-s4h4h Жыл бұрын
@@ajeet.islost Dashimaki tamago is not sweet. It has a slight saltiness, with a rich flavor and aroma from the dashi (broth). "Dashi" is a soup made by extracting only the delicious umami flavor from fish and kelp. Dashimaki tamago is one type of egg dish called "tamagoyaki." Tamagoyaki has traditional seasonings that vary by region in Japan. In the Tokyo area, the predominant style of tamagoyaki is sweeter than dashimaki tamago. (This version does not have a specific name and is just called tamagoyaki.) In the Osaka area, the predominant style is the saltier dashimaki tamago.
