Here in Hawaii, kei trucks are gaining popularity, and I did see a kei food truck recently. It was a little humorous, however, as the guy running it was a huge "local braddah." I think he took up almost all the remaining room in the truck! 😆

The negiri sushi by Sushi Sakigake looks done with finesse, the size, shape of the sushi looks far better than many mid priced sushi shop. Bara chirashi too. 👍👍👍

The mexican food truck really looks legit - even giving you the huitlacoche tortillas - it'd probably be even among the better places in the US. You probably could have done a vignette on how they make the tortillas since they're probably handmade and they have to source the masa in some special way.
