Me too:) I often cook miso soup now, even my daughter eats it and thanks me in the morning :) My best option so far is mushrooms, daikon, carrot, onion and maybe a little sea weed

One of the things I really like about your recipes Miwa (besides them being delicious of course!) is that they can often be made to use up food in the fridge. I really appreciate that! So many times recipes call for this and that, and then half the ingredients are never used again. Some of your ingredients require specifically purchasing them, but then you use them again, like the dashi packet. I will run out of it eventually, but then I can buy it again (or make a big batch fresh and freeze it), because I know you'll use it in other recipes, and not just soup. :) Also, I'm jealous of your stove! I know you don't use the little fish oven, but I would love it because I live in a small apartment in a large city, and being able to cook the fish in the little drawer would leave the rest of the stove free, and would be great for me. My stove is small because my kitchen is very small, so space is appreciated!

Everything looks delicious! There's a product in the U.S. called "Just Egg". It's a vegan egg product. It looks like liquid egg. You can use it exactly the way you would regular eggs. And it tastes the same, has the nutritional makeup of an egg, but no cholesterol like an egg has in it. It's wonderful. I will make the Japanese rice porridge with it. I know the porridge will be so great in the Fall and Winter. Thank you so much for your wonderful videos. I love trying and using your recipes. Have a wonderful Fall day!!! :D

Sorry Miwa-san, I was so busy yesterday. The noodles look delicious. My daughter would love it but perhaps I would omit the oroshi daikon; not sure if she eats that. Udon are one of my favourite noodles. I even found one made from konnyaku as the regular udon substitute. Never seen that one here. I think gobo (cut like sengiri) would also be great in the soup with the mushrooms. I just love the earthy flavour of it. I think I'll also try the rice soup (zousui it's called right?) She loves spinach and eggs. The weather here is changing as well, suddenly barelu 16 degrees C and rain.... I rather have the Tokyo autumns.

In America we call IKEA "I (like the English pronoun) - key - uh" ! My favorite type of Japanese mushroom is undoubtedly maitake. They're SO good! Also I have a question on dashi packets. I make mine myself with iced tea bags filled with kombu & dried shiitake mushrooms - is it best to soak them in slightly warm water for awhile? Or is it okay to straight up boil them for a bit? I've heard conflicting answers!

I love mushrooms - just last week I made kinoko no takikomi gohan for the first time! I used shimeji, shiitake and eringi. By the way, do you have any recipes using eringi? I'm not sure how to best use them :)

With the soup, could I use dashi powder instead of the pouch? That's what I usually tend to have on hand.

Yes! Absolutely ok!! the powder tends to include salt in it. so just make sure to adjust the taste by reducing the amount of soy sauce to you liking! ^^

I know English-speaking folks pronounce Ikea with an I like in the pronoun, but Wikipedia says that in Swedish, it's actually a short I like in "to hit". Where I live, we pronounce the I in Ikea like a long English e (like in "eeeeeve") How is the Japanese way of saying it?

Bonito flakes are not vegetarian! Bonito is fish ;) Vegetarians and Vegans will have to use a different packet for the broth - or make a broth with Kombu and Shitake.

Everytime you say leek, they are leeks. In America, they sell one type. I grew up in Hawaii,, I know most of everything you use. America is so narrow on what they know about. Do not worry when it's questioned. I use leeks in all of my soups. My leeks are larger than the American flag leeks, better leeks Leeks, onions and shallots are my soup base. Oh, also I hate ginger, is myoga less distressing. I was thinking about growing it. My chickens avoid plants that are pungent
