Hello everyone! In this video today, I make a simple Japanese breakfast called teishoku. Teishoku is similar to ichiju sansai where all the dishes in the course come together in a single setting.
Daikon Asazuke | 大根の浅漬け:
Ingredients:
30ml Vinegar
30 Sugar
10ml Soy Sauce
Salt
Method:
1)Massage salt onto sliced daikon and rest for 15 min.
2)Squeeze moisture out of daikon.
3)Mix all ingredients together well and marinate daikon for 1 hour.
Spinach Goma-ae | ほうれん草の胡麻和え:
Ingredients:
25ml Soy Sauce
15g Crushed Toasted Sesame Seeds
10ml Mirin
8g Sugar
Method:
1)Mix all ingredients together with spinach.
Dashi | 出汁:
Ingredients:
2.5L Water
5g Kombu
Handful Bonito Flakes
Method:
1)Poach kombu from cold water for 1 hour.
2)Remove kombu and sprinkle bonito flakes.
3)Gradually strain using cheesecloth.
Miso Soup | 味噌汁:
Ingredients
600ml Dashi
40g Miso
10ml Mirin
Method:
1)Bring dashi and mirin to a boil. Skim off any scum.
2)Strain and whisk in the miso in for best results.

I've seen similar breakfasts but with much smaller portion sizes of each. It's supposed to be light lol.

Japanese breakfest is the best! Even in a lot of good budged hotels you get these things at the morning buffet. I loved it and I miss it very much. Greetings from Germany.

The radish pickles can be made in advance, they store well for a week or so and therefore an hour isn’t needed daily. Also, make fresh dashi by placing the kombu seaweed in the pot overnight, in the morning I simply heat the pot to near boiling then remove it. Then add the bonito flakes as done here. It only takes a few minutes (don’t over steep the bonito-once it settles in the pot the broth should be strained. Lastly, many instant dashi products are available. I’m not fond of the instant powder but find the sachets (like tea bags) fairly good. Dashi is best fresh & used immediately but I eat miso soup daily with breakfast and prefer homemade to the sachets and make enough dashi for several days. Stored tightly & kept in the fridge it looses something each day but I still find it superior to any of the instant products.

My only, one time, experience with mackerel was not good as it was so very fish tasting. Watching how you prep and cook the mackerel has given me courage to try again. All the rest will be enjoyable to prep & cook also. Thank you again for your postings. Your passion for your heritage shines through. Side note: I showed this video to my 90+ dad and it brought him to tears. Dad grew up in Steveston and he vividly remembers the day he last saw his best friend and his family taken away on a bus, never to see them again. Dad remembers having his friends mom make very simular breakfasts that he would enjoy with his friend. Dad asked me if I would cook this for him. I'm going to make it this Sunday, February 14th for dad and my wife. I hope you don't mind me sharing this? Thank you again so much 🙏🏻✌🏻

Mackarel is a fish with plenty of oils and dark meat which gives its natural robust fishy taste. Although it is difficult to completely remove the taste, there are methods I am familiar with which reduce the strong flavours of the fish. 1) Removal of the guts as soon as possible to prevent the transfer of taste onto the flesh. 2) Gently washing the filets in sake for a minute or two also works very well. Just make sure to pat the filets dry before the salting process. 🙂 I am truly sorry for your dad's loss. For your family, it must mean much more than just food. I cannot do much asides from cooking, but if there is any way I can be of any help, please let me know. You are welcome to share this video and thank you very much for sharing your story with me.

@@HunterK my fathers loss goes back to when he was 12 years old, when his Japanese friend, and his family, were put on a Canadian military bus and sent to a Japanese internment camp. Dad was 12 when this happened and 78+ years later it still has a profound effect on him. 🙏🏻✌🏻

Mackerel is one of my favorite tastes - but here in the USA's South East, one can't find good fresh mackerel except if I drive two and a half hours to the coast. The fresh fish markets never have it, and flash frozen is also near impossible to find. My favorite way to have it is not cooked but brined the way Russians do it. If I tried cooking as this gentleman does - the breakfast would be ready at near dinner time. What a show of skill and the approach to the food seems to be full of some sort of deep reverence. Wonderful to see.

I believe it was grated daikon radish, a very common accompaniment to oily fish in Japanese cuisine

It’s a traditional breakfast they don’t eat this every morning. The British don’t eat their traditional breakfast every morning just like the Japanese don’t either. Japanese women prefer being single because they dont want to have children in the future or risk having them as it’s not a personal interest or goal of theirs.
