Thank you for a easy, tasty tutorial! It has been many years since I have eaten grilled mackerel. I made this today on the grill and without the added salt. I also marinated it in mirin and lime juice instead of sake since I had none on hand. It was exceptional and was a big hit with guests alongside grilled bok choy and rice!

Great recipe. But one thing, i dont think the way you cut the lemon is correct. You won't get the maximum juice by cutting it that way. It's the same with cutting an orange. Always cut it horizontal, not vertical. Thank you for reading.

This was my favorite hospital dish in Japan! I've been craving it for months already. Thank you chef for sharing! By the way, may I know what sake I should use? Can I use Mirin instead?

Thank you for the comment! The best sake to use here is a cheap junmai (pure) drinking sake. This is an optional bonus ingredient, so you can omit the process if it's hard to get, but I don't recommend using mirin instead here! I hope this answer helps! :)

Hey Sudachi! I love your videos and recipes, I have done many of them and they are delicious. What kind of oven grill do you have? Is it available on Amazon?

Thank you always for trying my recipes! It means a lot! The grill is called "Sakanayaki grill (魚焼きグリル)" attached to a standard stove in Japan, but I'm not sure if it's available outside Japan. Another similar product is fish roaster, where you can get the grill separately.

I'm not quite sure where you can get this specific grill outside Japan. In Japan, this is called a "fish grill," and most hobs come with one of these!

Salmon, yellowtail, saury, cod would be good options, and I have separate recipes for salmon (sudachirecipes.com/japanese-salted-salmon-shiozake/) and saury (sudachirecipes.com/sanma-no-shioyaki/) if interested. As for cleaning, it really depends on what type of grill you use, but if you have one like in this video, it's not hard to clean up.

Yes, as long as the fillet is from a decent sized mackerel (Blue, Chub, Indian, Double-lined, Spanish, Atlantic, but not small ones like horse mackerel), any types of mackerel would be good!

It’s possible, get the smoky flavor from smoked salt instead of regular during the preparation.

I cooked mackerels a lot with my air fryer. Simple salt and pepper style, no issues. Just missing the smokey flavor that's all.

I have been catching a lot of saba, but nothing bigger than 9 inches, what size would you recommend using in some of these recipes. Or Is there a. Good recipe for smaller fish

For this recipe, I recommend decent-sized (medium to large) mackerels. But when I fish smaller ones, I tend to cut them into pieces, then make Karaage or Tatsuta age. Hi I have a ninja foodi 6 in 1 indoor grill, do you think I should use air fryer function or grill function or broil function, and what temperature or minutes? Thank you

Hi, thank you for your comment. I have no personal experience with this or similar products, so it will be a total guess, but I believe that the broil function might be the most suitable option. So, I cannot provide exact temperature and cooking time recommendations as well. However, as a reference, when cooking this type of fillet fish in a toaster oven, it is typically cooked at 220°C (428°F) for approximately 10 minutes.

I was born and raised in Japan as a kid, but I lived in England for 4-5 years before moving back to Japan. I think that's why my English accent is all mixed up!

i always wanted to know one thing... do japanese people really eat fish bones and fish head? sometimes i see in anime or drama how people just bite into a whole fish. that wasn't deboned... and they even bite into the head. and i mean... into the head. no picking the flesh out of the heat, but really opening the mouth and shoving the whole head into it.... is this actually a thing? do i also need to do it? am i considered impolite if i don#t eat the fish until nothings left?

Thanks for your question! I can confirm that it's not a thing in real life! In Japan, it is certainly very unusual to eat fish heads or bones in their entirety. When a whole fish is prepared, it is usually served with the head intact, but we don't eat the head, and we use chopsticks to remove the bones. This is considered perfectly acceptable and not rude. I hope this answer helps clarify things for you!

@@SudachiRecipes oh thank god. i was really insecure about that, and i know that fish bones do have a strong taste to them, so something like hone senbei i would even be curious about but i wouldn't like to eat them like that, especially as most of the bones are quite small and so they scratch the inside of your mouth which is always irritating me ^^ now i feel relieved :) thank you!

I don't own a griddle, but you can probably use the same steps until the cooking part. However, you may need to adjust the cooking time and method from there.
