I would love to buy a cutting board or other item that master carpenter Shoyan has created. Shoyan is a very skilled craftsman and artist with wood. The price is reasonable to support his hard work. Maybe he will make more for his shop since he is now sold out.

I love working with Hinoki. It's very soft and works easily and the smell is amazing. I wish we could get it here in the U.S. 私はヒノキと一緒に働くのが大好きです。とても柔らかくて働きやすく、香りも素晴らしいです。ここアメリカで手に入れたらいいのにと思います。

Is cypress something else in Japan? Here in Louisiana, usa, cypress is very soft for a cutting board. Those Japanese knives would cut right through!

Japanese Cypress is mostly similar to what you could fine in Louisiana. It's a bit harder, but not by much, still a softwood. Japanese use their cutting boards differently than in the US, and is better suited for use with Japanese techniques and Japanese knives (which are made of a different steel and thickness)

All of the stock is flat-sawn, with the outer growth on the top of the finished cutting board.

Most people do not know that wood has antibacterial properties. This slows down the growth of bacteria that might be retained on a plastic cutting board.

The flip side of that is a plastic cutting board can just go in the dishwasher and be sterilised at a much higher temperature than if it were washed by hand.

@@-_James_- correct. From a utilitarian point of view, a plastic cutting board is far superior in most ways. It's cheap, goes in the dishwasher, doesn't require maintenance, etc. It's less pleasant and less beautiful however.
