the white topping on the rice was likely tororo kombu which is a slimy kelp. japanese love things of this texture, much like natto, okra, and grated yam called nagaimo.

I love when restaurant has a food replica from plastic like in here, instead of just pictures. Used to have many of that, but now only several few restaurants do that in my country.

Hi Mark. I think the white thing over the rice is Tofu skin called Yuba??? And green thing is seaweed called Mozuku! I am guessing. haha Every thing looks amazing and nice presentation. I would recommend you eat unseasoned grilled eel called Unagi no Shira Yaki. That is one of my favorite Japanese dishes. Have a wonderful day!

I can understand now that you have to take care your son and you still have to make the vlog to pursue your hobby, job, and dream. Usually Ying helps you out sometimes to hold the camera so you can concentrate more on explaining the food, but now Ying is busy with Micah, So you have to hold the camera your self. I admired your hardwork Mark, but to be honest the presentation is much better when somebody is taking care of the camera and you taking care of the food. Cheers!!

1:35 to be exact, it should be "Sake no Ana", literally a hole of sake. "no" functions like 'of.' 8:37 white one in the center is called "yamaimo", pound Japanese yam. And green seaweed is kind of root of seaweed. You can pour little bit soy sauce when you eat it.
