What amazes me is how they prepare their food with care and delicacy. They make use of every consumable part of the fish as possible. Even with simple garnishes, they make the dishes so mesmerizing.

I can attest that this is a good chef that knows what he's doing. My father in law is a sushi chef and prepares his fish the same way. It is an art and these guys know what they are doing. I use the same knives and have the same cutting boards, etc. But he's more skilled than I am. I was drooling looking at the Kama. I want to eat that so badly.

I now love watching these prep videos. And watching these chefs skillfully cut these fish up like a surgeon. And I love sushi. When I look at a plate of sushi they look like beautiful gem stones pulled straight from a treasure chest. And the dishes these guys make are just art!
