How to Order My Cookbook from Amazon Japan:
• How to Order My Cookbo...
Korokke (Croquette) is a parcel of food such as minced meat or vegetables, shaped into a cylinder or circle, encased in breadcrumbs and deep fried. My mom always mixes minced meat and boiled eggs to add richness, which makes the croquette really addictive! My darling loves it, so I always make tons of them!
Try out my recipe and you will know why ;)
---------------------------------
Korokke (Croquette)
Difficulty: Medium
Time: 30min
Number of servings: 16 croquettes
Ingredients:
4 egg
800g (1.8lb) potato
200g (7oz) ground beef and pork mixture
200g (7oz) onion
2 tbsp. butter
A
1tsp. salt
cracked black pepper
nutmeg
B
flour
beaten egg
Panko (bread crumbs)
vegetable oil for frying
tonkatsu sauce
ketchup and/or mayonnaise if desired
vegetables of your choice
Directions:
1. Cook hard-boiled eggs and roughly mince them. Peel and cut potatoes into medium chunks and boil them until soften. Drain and mash them while hot.
2. Mince the onion and saute with butter until soft. Add ground beef and pork mixture and cook until done. Season with A.
3. In the pot of mashed potatoes (1.), mix chopped eggs (1.), and cooked onion and meat (2.).
4. Make the mixture flat in the pot and divide it into 16 equal portions.
5. Make flat and oval-shaped patties. Coat each piece with flour, dip in beaten egg, and coat with panko.
6. Fry them in oil at 170C (340F) until cooked golden brown.
7. Serve croquettes with ketchup and/or mayonnaise if desired, and garnish with vegetables of your choice.

What I love about this channel the most is the inclusion of Japanese subtitles. (I'm currently learning the language and I'm trying to find something that is keeping the language app in check. I know random, but I just wanted to say thank you for that).

Just made this and it was AMAZING! Thank you for sharing your recipe! :) Ended up not frying them, but baking them. So in a pan over medium heat with a touch of oil I pre-browned the panko (since I wasn't going to get that nice golden color from the baking like I would have from frying), then I cooked them at 400 F for 15 minutes.

A simple tonkastu style sauce would be 3 tablespoons ketchup, 1 teaspoon worchestershire sauce ... add honey or prune juice to sweeten it further, if desired.

First of all thank you for your wonderfull recipes and I personally think of all the How to Japanese, you really are the best host. Everything is pretty clear and could be done by a toddler so much it is well explained. The only suggestion I would give to you is to include in your recipe sheet how many portions the recipe does. Sometimes it's hard to tell and I have to do the recipe again when I find out there won't be enough for all guests instead of adjusting ingredients quantity from the beginning! Thanks !

Why does your croquette looks so tough in the end when you ripped it apart? I do not see any tenderness whatsoever and the texture by my perspective is chunky and maybe some potatoes are undercooked. My opinion :) don't take it personal

I like to boil the potatoes with the potato skin on and then after it is cooked, I peel them off. It keeps the potato in shape then mash them up. But the tonkatsu and ketchup mixture is a good idea to make it look thicker. I will definitely try that out.
