I was super confused, it seems the store looks completely different now. I only went inside once I saw a group of other slightly lost-looking people go in first. Udon was very good.

The menu at 6:20 says 950 yen for the standard udon with egg "月見うどん". That's roughly $9.50 usd (actually less, but close enough).

@Da Lama Nah, you're forgetting cost of raw material, utilities, rent (if any), maintenance, etc. 950¥ per bowl is more than a fair price. Shop keeper probably makes enough to break even (maybe a little more), especially in current times.

Either he is not paying rent or he has other source of income. There is no way he can make money considering the food cost, rent, utility and worker salary when serving only 30 bowls a day

70 a day during weekends. It's roughly 14 000 bowls a year and he has almost whole day to do other stuff, after preparing for next day of work.

He doesn't want to make alot of money !,.... he just fooling around . He's probably semi- retired , owns the building , already wealthy,.....he just likes cooking as a hobby,....and socializing with customers ,........living his idea of a good , happy , fulfilled life ! ...... Besides , how many chefs wear a full tie while cooking ?.....lmao !.... too much stress kills !

Actually he rents the ramen shop during the morning hours from another ramen shop. Hence he only is open for a short window in the early morning and a majority of the expenses do not fall on his shoulders. During the weekends he is open for a slightly longer period than 3 hours as well. Hope that makes sense!

@@Japanesefoodcraftsman and you didn’t think to mention this in your description - after knowing that he wanted to be a you tuber and now that we know he isn’t paying the bills for the noodle shop - you have to wonder if he’s using the cooking to be that you tuber after all - glad he has the luxury to make those 30 bowls of noodles a day - but you have to wonder if it’s because he loves making incredible food or if he’s trying to be that famous you tuber after all 😳

Egg production and marketing is much stricter in Japan than other countries, including the U.S. That being said, it still does occasionally happen, though at a far lower frequency.

In Japan, eggs are generally safe to consume raw or partially cooked. Regarding Salmonella, that may only be present in eggs when the outer shell surface has been exposed to poultry fecal contamination. In Japan, at the farm level - the chickens are vaccinated against Salmonella, their feed is heated to kill Salmonella, and the chicken houses are regularly cleaned and disinfected. As a result, Salmonella occurrences related to eggs are extremely rare there.

Actually on the weekends it is open longer. This store is unusual as he rents out the store from a ramen shop but only during the morning hours. So he doesn't have to pay a majority of the expenses.
