Great stuff. Remember not everyone who trains in martial arts is doing it for sport / MMA. The curriculum is meant to be adapted to the practitioner's needs & abilities. Military vs Law Enforcement vs civilian self defense needs for example. Some people train for fitness and really don't care about the details too much. Some people train just for fun, and enjoy the social aspects of a training academy. Some people also learn differently and require everything to be taught in a step by step manner, whereas others can learn conceptually. Some people will like & or perform a particular defense / technique better than others that were presented. Lastly the particular environment one finds themselves in may dictate what can be done efficiently. For example in thigh deep water or snow kicking is pretty much out.

I recommend hoi jeon moo sool, it comes from hapkido but more focused on self defense, most of the defenses I've seen here are practiced in it taking from a lot of other arts, it's aesthetic and truly effective

6:34 It looks like you'd have shuffle into the kick stuff that rear leg kick, likely doing that shoulder press or ABD, then follow up with the oblique kick as the opponent is trying to reset. Also, creating an angle out to spike your elbows into the leg while doing the oblique kick would work.

What about turning into the kick with a raised leg /knee ? Or movingaway? Or crowding,moving inside his kick? Or a pure stop hit /or kick to the opponent? Or take the kick and retailiate,with an encounter ending technique?

Its actually a common Muay Thai strategy, but seldom employed in the ring as pro fighters are too fast.

well from Thai Boxing three great options emerge the one that fits best with JKD concepts is the Teep or Push kick, it is straight so if you throw it from your lead (which is what Teep really means) it should get where it is going before the rounder travel path of the kick in question. straight punches are also great use the same arm as the 'side' of your body the kick came from Checking the kick, it does not seem like much but it is terribly painful and can result in breaking the opponents leg if they didn't throw the kick well. The punch option really isn't Intercepting as it usually means you have to eat their shot to land yours but putting damage on someons face is a great way to discourage them from the tactic they are currently employing.
