I just made this cake. I tried a lot of “ quick chocolate cake” recipes and this is by far the best. So moist and rich. I baked mine in am 11 x 14 pan that I greased with butter and coated with flour. I didn’t do the parchment paper thing. Loved it.

@@2026love have to use baking soda ... but instead of using i teaspoon .. of baking soda ...i used 1 1/2 teaspoon of baking soda ....it worked well ....i also used olive oil ....because its healthier ... used lemon instead of vinegar ...u dont need to use parchment paper if u oil and flour your cakepans before u put the batter in ...made it in my convection toaster oven ...just remember when u use convection oven ...it runs hotter than the normal oven ...so i turn down the temperature a bit lower .by about 25 degrees ..and cooks in around 25 minutes ..in my convection toaster oven.. ..

@@TheFloral17 I used regular cocoa powder and used brown sugar instead of castor sugar...It turned out pretty good. I think brown sugar is a bit sweeter than castor sugar and that maybe why I didn't get that bitter taste.

My Life has changed since I found you Jenny. I'm officially Your Number One Fan I now make an Easy Chocolate Cake ever other day so I don't run out. I'm alone but that's good so no one fusses at me or sneaks my chocolate cake. Today at the grocery store I had a bit of a wake up call. First, I had to go to a box in the garage for my 'just in case bigger jeans' as I've gained a few extra pounds. As I was checking out & reviewing and bagging my purchases, I made a little discovery. Everything I purchased was directly related to your recipes.The alarming part was it didn't concern me that I had 10 lbs of Flour & 5 lbs of white sugar, powdered sugar, jam, cream cheese, cocoa for baking, lemons, butter & vanilla. I started laughing as it dawned on how very happy I was! I only wish I'd found you before the soon to be X husband & broken neck. You've given me permission to be happy. I love to cook now as I enjoy the process from shopping, making new recipe cards to the cooking & enjoying the results. I have gained some weight but I was very, very underweight as I'd been through some hard times. I'm mending with a big smile & a size bigger (only the one size though)!! Thank you so much Jenny! You've made me smile & feel good about things. Our Grandmothers were right when they said to eat & we'd feel better. I just had to tell you how thankful I am.🙏❤️

I've been making this cake for over 45 years, "Mix-in-the-Pan Jiffy Cake", for clients who are allergic to eggs, milk, etc., or have food preferences such as being vegan. My recipe calls for white vinegar, but lemon juice would also work in the same way. I mix the ingredients right in an 'ungreased' cake pan w/ a fork, if it will be left in the pan for serving. For diabetic clients, I use Swerve White Granulated Sugar Replacement & for gluten-free clients, I use gluten-free flour. For a chocolate cake, I use 1 cup cold coffee in place of the water, to give the chocolate flavor a boost. I also make this cake without cocoa for other flavors - for a lemon cake use lemon extract, water, & lemon zest or lemonade & lemon zest; for an orange cake use orange extract, water, & orange zest or orange juice and orange zest: banana extract w/ a little yellow food color; strawberry extract w/ a little pink food color; etc. - any flavor works. I bake all my cakes at 300 & test the internal temp w/ an instant-read thermometer for doneness, like you'd test a steak. Baking cakes at 300 degrees also gives the edges more time to bake higher, ending up w/ a flat cake. When you can smell a cake, it's almost done, & time to test. Once the internal temp reaches 212 degrees, the liquids are boiling & evaporating, so the cake will be dry & over baked. I pull all my cakes when they test at 208 degrees since they will bake out of the oven for a couple more minutes. If leaving this cake in the pan, press saran on its surface while it's still warm, about 30 minutes out of the oven. If removing it from the pan (you can make 2 layers for a layer cake) put parchment in the bottom of the pan & spray the sides of the pan. Place saran & a cookie sheet on top of the cake, flip all over, lift off the pan, wrap airtight in the saran, place back in the pan upside down, & leave on the counter at room temp for a day to 'season'. Cakes that are made a day ahead of time will be easier to work with, w/ fewer crumbs & crumbling.

What flour do you use to make this gluten free? I have tried Almond flour twice and both times the cake (and muffins) fell flat and was a big pile of mush in the pan :(

@@ChristinaMac Just buy an all purpose GF flour. Using only almond flour or only rice flour etc doesn't work well, it needs to be a blend of a variety.

JENNY!!! it is Sept.2018, I made this unbelievable chocolate cake this afternoon...I will NEVER attempt another cake recipe after this one. Your amazing cake is light but moist, chocolately, I could have used more spray in the pan, but what the heck, we'll dig it out. Didnt have lemon juice, used apple cider vinegar & instant coffee instead of plain water. The entire recipe took less than 5 minutes to put together, BY HAND in ONE BOWL. Made a light frosting like yours, its just the most delicious cake. I want to try and figure out how to make a lemon version. Thank you so much

Watched this video... got up and made it. I used coconut oil (liquid) and the white wine vinegar instead of the lemon juice. Great recipe. Only change is that the frosting was way too sweet so anyone who doesn't like super sweet frosting maybe start with 1/2 c powdered sugar. I also used coconut milk for the frosting and coconut oil (solid) to keep this cake 100% vegan, Delish.

There is an avocado chocolate frosting that I believe you would absolutely love. I am not a vegan but I make this frosting because my husband has cancer and we are trying to eliminate sugar from our diets, but he loves chocolate so I did research on making sweets that will satisfy my husband the sugar/chocolate junkie. The frosting tastes really good and "no" you cannot taste the avocado at all. Find the recipe at PALEO SPIRIT - just type in Avocado chocolate frosting. I also make a Mejool Date chocolate cake to go with it. This is not a decadent cake to be sure, but it is so satisfying for chocolate lovers that are trying to cut back on proteins and refined sugars.

I just made the Easy Chocolate Cake! I didn't have lemon so I used the vinegar. It was delicious. So yummy! I'm snow bound & I had nothing here remotely interesting or sweet. I took it as a challenge & my Lord was I in for a treat. It's so good. I made the glaze which was wonderful. I've eaten 2 large pieces already. An hour ago I hadn't even started. You're a genius & the cooking guru for sure. It's a great cake and just as good as any chocolate cake I've ever eaten. Thank you so very much Jenny, you really can cook. Next time, when I have more powdered sugar I'll make your icing! I'm going to get year & make your yeast rolls. I grew up in the South & never saw this recipe. . We worked ourselves to death kneading to get the perfect rolls. I'm sorry my Nana & Mama aren't here to eat your rolls because I know they would've love them. You've changed my life. I've had a broken neck and lots of surgery and nerve damage so if I wanted yeast rolls, I need a bakery, which are always sold out at holidays, or I buy the frozen ones & thaw them out, which are expensive and not as good. Now, I can make my own again. Thank you so much. This means a great deal to me. You're helping correct a problem and keep a bad memory away. 🙏❤️

I found this recipe when I was maybe 10 years old in one of my childhood magazines, been making it ever since; I'm 81. It was called "Crazy Cake." It was/ is good for me as I have egg and milk allergies. I have seen it called "Poor Man's Cake" and War-Time cake." It really gets me how things recycle, rename it and people think it is new.

Grew up eating tons of butter, healthy food. Not sure why she doesn't like much butter. I love butter. Eat tons of it. Things taste better with real butter. And no it does not make you fat. What makes people fat is eating lot's of sugar, and not moving, not exercising. Glad the kids are learning to make their own bread. I like Jenny's easy baked bread in a pan.

I made this tonight and took my chocolate loving mother some. She kept going on and on about how good it was and how she couldn't believe that I made it from scratch. It was so easy too. @@scifiaudious2 yes vinegar. For years my family has made what is called either Stir Crazy Cake or Cowboy Cake. About the only difference is our recipe calls for cold coffee in the cake mix and the topping is cinnamon and sugar which crackles when baked. My whole family loves it so much that they request it for birthdays, with the crackled top or iced like this one. Coffee in the icing is good too. Best with instant coffee so as to not liquefy the frosting.

Aerating the flour is something which we practice for making Indian Nan, Roti and I guess the formula works the same for cake as well. As a matter of fact, this is one of the best chocolate cake recipes I have ever come across :). Nice, easy, traditional and looks delicious..

@@susie2251 You're correct... but if you sift the scooped flour it will still be too much flour.. notice she doesn't use her cup to scoop out the flour as well as she airs the flour..

I've been making this cake for 50 years. It's called the No No cake. As in no eggs, no butter. I always use white vinegar, not lemon juice. And adding toasted, chopped walnuts makes for a great crunch to the cake. Good on you Jenny!

@@ldnh.6300 Try using Splenda. It can be used cup for cup like regular sugar, but it will produce a bit of the artificial aftertaste. As for the oats, I've never tried that. But you can replace a half cup of the all purpose flour with almond flour. The cake will be a bit heavier though. Happy baking!

Yesss, I have a vegan friend, but usually, the things I make for a birthday and stuff aren't vegan, and when I do look up vegan cakes, they usually require things like apple sauce or ground flaxseed meal, whatever that is, and those are things I don't have lying around and would be a waste if I just have to use it once. This is great, thank you! Now I can finally bake things for him too haha

Flaxseed meal is just ground Flax seeds. It works brilliantly in the cakes and stuff I make. No cholesterol either! :)

Aether Idol I think it went straight over your head. What she is saying is that this is a normal recipe with normal ingredients that most people will have in their house already, it’s really easy and simple and takes little effort, has no weird ingredients and looks amazing

I also offered a suggestion which I personally recommend which is very cheap. @@jadenb6292 hi I don't know the science so not sure what ingredient was used to replace the eggs but I do know that it works and tastes like a cake with eggs. I even made brownies using the same ingredients but adding chocolate chips. Came out great. .. try it 😊 Stay well

So I’m watching this and thinking WOW she looks so familiar and then it hit me. I went to High School (Central, London, Ontario) with Jenny, but she was Jenny S. For her privacy’s sake, I won’t print her last name. She was hysterically funny even then, so her career was a no-brainer, but she has gone back to her original hair colour, (which, by the way, Jenny, looks GREAT!). And yes, people, she is 73, because I’m 74 and we were in the same class! Jenny, GOOD ON YOU - you look FANTASTIC! And PS - I will be making the cake, AND PS again - I had a lot of beautiful prom dresses from your mom’s shop!!! :-)

I made this as a sort of birthday cake for me for the weekend. I wasn't sure, to me a cake has a filling and a topping, but boy was I wrong. This is the chocolate cake I've been looking for my entire life. It's rich, moist, the topping isn't too sweet, and it's utterly delicious. It would work untopped as a pudding with cream or custard, could be double-layered as a special cake, or served just as you do it and it would never disappoint. My partner says it's best chocolate cake I've ever made. I agree. It's also the simplest by a very long way. Wonderful. xx

Try putting a piece of lace over the top of the cake, then sift powdered sugar on top. Then carefully remove the lace. You could use other stencils as well, to make "snowy" patterns on it for fun.

I tried this recipe and it was divine; it was so fudgy and easy to make. My mum isn't a fan of chocolate but even she had this with tea and said it was delicious. I recommend baking it a little longer, mine took around 40 minutes to bake. Great recipe Jenny!

Okay, so, I made this tonight. Being that it's late and I wanted something sweet, but didn't feel like driving to the store, (I also didn't have any eggs, or much milk.) I looked up recipes and came across this one. I had a fair share of scepticism, but I can't believe how yummy this came out. Here's a tip if you make this cake. Use 1/4 of pretty warm water to dissolve the cocoa powder in, it releases the oils in the cocoa powder and gives a deeper taste. It's called blooming. Then add 3/4 of cool water making total amount 1 cup as called for in recipe.

Sagisli Did you know you can freeze eggs? Great KZbin videos out there showing you how to slightly scramble, put in a muffin tin, freeze and then remove & place into a freezer bag.

That’s a fabulous stove!! My Mama had one like it when I was growing up on the farm. She had 8 kids, a brother, my Daddy, and various and sundry kids-friends-and-neighbors that she fed 3 meals a day. 2 pounds of bacon and sausage, 3 dozen eggs, a pot of oatmeal, and a pan of gravy (2 gallons?) EVERY SINGLE DAY. I so miss that kind of cooking. She was amazing!

Jenny, I just made these In cupcakes. 350 degrees for 10 minutes then 325 degrees for 8 minutes, I added a raspeberry filling in the middle, I had dark chocalte special dark chocolate cocoa powder, and it worked fantastic. I also used a dark tin cupcake pan.I'm going to let them cool, and use your icing mix. on top I'm adding herseys chocolate, pieces cut up, no I'll shave the chocalete, I don't have to much, it made 18 cupcakes, with the raspberry filling, they look really good. Can't wait for them to cool and I ice them. Tomorrow morning I'll bring them downstairs for the apartment complex to enjoy. Thanks Jenny. Your a great cook to. Miss Jane Kovaly
