It can get very busy here at lunchtimes but that's not a problem because here we have the privilege of watching what is truly a master class in efficient production line style dedicated team work; it's a real pleasure to witness the "art" of fast wrap making in action. These guys are amongst some of the FASTEST Street Food workers we've ever seen.
These guys have honed and perfected their wrapping technique over the years to such an extent that from the moment they take the flatbread in their hand to the moment that the filled wrap is handed over to the customer; can take on average well under a minute)!!! (Note, the whole of this this video is in real time; nothing has been speeded up, even though at times it may appear so).
Also watch some very, very FAST falafel making action. This is what fast food really should mean..........here it should be called "100 miles an hour" fast food. When was the last time you ordered something from a fast food take away (or restaurant) & spent ages waiting for it??? This is wonderful "Restaurant Quality Food" but at very affordable street food prices!!!
There is no secret to the recipe and preparation because they make everything in full view of you including the handmade Saj breads.
They take the freshly made Saj Bread and then the filling includes: Hummus, Lettuce, Aubergine, Pickled Gherkin, Pickled Jalapenos Peppers, Freshly cut Tomatoes, Falafel, Fresh roughly Chopped Parsley, Tahini (Sesame & Lemon sauce) and Chilli Sauce. The falafels are always being constantly fried so in the actual wrap they retain a nice crisp and crunch.
The falafel itself is a combination of more than 20 kinds of vegetables, herbs and spices:
* 65% Chickpeas.
* 15% Vegetables (Parsley, Celery, Onion, Garlic, Ginger, Green & Red Paprika, Capsicum.
* 10% Herbs.
* 2% Spices.
* 6.5% Water.
* 1.5% Salt.

No, falafel is not originally Syrian. Levantine countries in general (Palestine, Syria and Lebanon) are famous for making falafel but it’s not originally Syrian. I know there are many Syrian falafel restaurants in Cairo that opened after the Syrian civil war but falafel origin is debatable although many resources claim that it is Palestinian.

No. Falafel is not only Egyptian. Actually, many resources claim that it is Palestinian. The Palestinian way of making falafel is different from the Egyptian one. In Egypt they don’t call it falafel. They call it “taamiya”. This is falafel the Palestinian way 🇵🇸🇵🇸

I would love to try it, looks really good! I've eaten falafel in Israel, in both Jerusalem and Tel-Aviv, and they serve the falafel differently there. First of all they serve the falafel in pita bread and they don't stuff them with lettuce etc like here, since every falafelstand has a number of jars outside the shop with different kinds of pickled vegetables were the customer can pick for himself whatever he wants. I think this is arab falafel, not israeli because of how the falafel is made (arab flatbread) and served.

There is nothing called Israeli falafel, all the ways are originally arab, the wrap and the pita and the baguette even, 99% of falafel places are either owned by arabs or Jews who came from arab countries (also arabs)
