鹹蛋海鮮豆腐
材料:
鹹蛋1隻
豆腐1盒
雜豆少量
急凍帶子8粒
急凍蝦仁(中)6隻
處理:
1. 急凍蝦仁及帶子,清水解凍。
2. 雜豆,清水解凍。
3. 鹹蛋,刮去灰,清水洗乾淨。
4. 鹹蛋黃及鹹蛋白,分別放在兩隻碗內。
5. 預備芡汁:
a. 生粉1茶匙
b. 蠔油1湯匙
c. 糖半茶匙
加入適量清水,攪勻。
6. 蝦仁及帶子已解凍,清水洗乾淨,擎乾水,放碗內。
7. 雜豆,清水洗乾淨,擎乾水,放碗內。
8. 蝦仁及帶子,加入少許鹽,攪勻。
9. 豆腐,放碟上,切開一粒粒。
烹調:
1. 白鑊,開最慢火。
2. 在鑊內加入鹹蛋黃,加入清水30毫升,壓爛鹹蛋黃。
3. 鹹蛋已煮溶,加入豆腐粒,轉大火煮滾。
4. 加入雜豆,煮至收汁。
5. 加入蝦仁及帶子。
6. 加入芡汁,大火滾起。
7. 加入鹹蛋白,大火滾起。
8. 完成,可享用。
Tofu with seafood and salted egg
Ingredients:
Salted egg 1 No.
Tofu 1 box
Mixed vegetables little
Frozen scallops 8 Nos.
Frozen shrimps (medium) 6 Nos.
Preparation:
1. Frozen shrimps and scallops, defrost in tap water.
2. Mixed vegetables, defrost in tap water.
3. Salted egg, remove ashes. Rinse thoroughly.
4. Salted egg yolk and white, are to be put in 2 separate bowls.
5. Prepare sauce:
a. Tapioca starch 1 tsp
b. Oyster sauce 1 tbsp
c. Sugar 0.5 tsp
Add in appropriate amount of water, stir well.
6. Shrimps and scallops have been defrosted, rinse thoroughly. Drain. Put in a bowl.
7. Mixed vegetables, rinse with tap water. Drain. Put in a bowl.
8. Shrimps and scallops, add in little salt. Mix well.
9. Tofu, put on plate. Dice in cubes.
Steps:
1. Plain wok, turn to the lowest flame.
2. Put salted egg yolk in the wok. Add in 30ml of water. Squash the salted egg yolk.
3. Salted egg yolk has been melted in the water, add in tofu cubes. Boil it up at high flame.
4. Add in mixed vegetables, braise it until the sauce becomes thick.
5. Add in shrimps and scallops.
6. Add in the sauce, heat up at high flame.
7. Add in the salted egg white, heat up at high flame.
8. Complete. Serve.
All ingredients can be bought from supermarkets. This dish is simple and the ingredients are light. Try this dish tonight
