Hello! You can use whatever flour mix you like, but if your mix has xanthan gum in it, you might not need the extra egg I put in to compensate for that. 😃

Hi 🤗 a new sub here! Thank you for sharing your GF recipes with us. It’s hard to find good GF recipes. I’m gluten and dairy free so I usually sub the milk or butter with dairy free that I have on hand. Im so glad you mentioned that adding an egg can replace xantham gum. I can’t do psyllium husk either. It’s hard to replace when you don’t know what your doing lol. I was so used to cooking with wheat and dairy for over 40 yrs, now I’m learning all over again GF and DF. This flour recipe sound like a great mixture. I can use it 1 to 1 cup in recipes, right? Hello! My flour mix can be used cup for cup swap out, if you notice what you make is a little too dry, add a little less flour the next time! I use different flours for some of my other recipes, some are here already, and plenty more to come!

I was so excited at the beginning of the video to see that you don't use xanthan gum, since I can't tolerate it. Unfortunately, then you used almond flour. I am sooo not able to do almonds in any way and most tree nuts are problematic. Any idea if you can use either pumpkin or sunflower seed flour to replace the almond flour?

Hello! I have used brown rice flour in place of the almond flour before, and that works great! Sorghum flour can be used, but sometimes is a little heavy for cakes and cookies. Cassava flour would be great too, although as with any GF flour, some flours are a little more absorptive than others! I have not used pumpkin or sunflower seed flour before, but let me know how it goes if you try them! And thank you so much for watching and commenting!!

Hello!! I don't have very many recipes that I add in xanthan or guar gum and I always put the recipes in the description boxes, depending on the recipe I just add in an extra egg, or for recipes that don't have eggs, I just add one or an egg white! It does the binding perfectly in place of the gums! Thank you for watching and commenting!

This is the video where you show the recipe for gluten free flour. In the printed recipe m it says that the white rice flour and the tapioca are the same amount with the other flours 1/2 the amount. In the video, if I understood correctly you say 2-16 oz bags of white rice and one 16 oz bag of tapioca. Would you clarify that for me, please. I would like to make the large batch. Hello!! In my video, it is 2-24 oz bags of White Rice Flour, and you are right! I typed it wrong when I put in the amounts. It should be 2 cups of White Rice flour. Hi! In the video, it’s 1 16oz of tapioca flour, the same amount as almond and coconut. In the description, it’s 1 cup of tapioca flour and 1/2 cup of almond and coconut flour each. Am I missing something? Thanks!

Thank you for your reply. I noticed that I made a purchase error. I bought one bag of white rice flour and one brown rice flour. Do you have any experience using the brown rice flour. Do you have a chocolate cake or cup cake recipe? I looked through the titles of your video and didn’t notice any video covering a white or chocolate cake or cup cake. @@beckyjohnson3161 I am glad to help!! Brown Rice flour is great! You may notice a heavier bake, such as with a cookie or cake, but brown rice flour will work. I do have a sour cream chocolate cake recipe/video, it is easily made into cupcakes!! I also have carrot cake, and strawberry cupcakes videos too! Very soon vanilla cake is coming this way! I do! Sometimes I add a little more or a little less to get the right consistency, depending on what I am making. Because I add an extra egg in place of xantham gum, it may cause the mixture to be more wet, if that happens, I add a little more flour.

Hello!! I am excited for you to start baking and cooking!! I don't know the exact measurements for the container in the video, but I have upgraded to a larger jar that is a 4 liter mason jar with a lid. There is a link for it in the description box for my peach hand pies. That jar fits one batch of my flour to the top, and it fits nicely in the fridge! I know the feeling of trying to fit jars in the fridge lol! You are so welcome!!

Hello! Yes, you could use brown rice flour. That being said, I have noticed that brown rice flour can be a little hefty of a flour for some baked things. The white rice flour yields a softer more tender texture, of course depending on the recipe. Let me know if this helps!! And thank you for watching and commenting!!

For most recipes it is a 1 to 1 ratio! I don't have an exact time frame for how long it lasts, I bake a lot, so I go through it pretty quickly. It can be stored in the freezer as well! Thank you for watching and commenting!!

Hello, I am a new subscriber! I am glad to have found your site. I was looking for the best gluten free flour to use for gravy and ran across your video on making gf biscuits and sausage/mushroom gravy. My husband is the gravy maker but we have yet to find a decent gluten free substitute for regular white flour in making it. I am looking forward to having him try your blend for making gravy. Do you have other blends that you use for different types of gravy? Also, I keep my flours in the freezer and they keep for a long time in there. I don't use mine up very fast. I am looking forward to watching more of your videos!

Hello!! I am so happy to have you here! I do use other flours to make gravy, sometimes just plain old white or brown rice flour does the trick! Since I plan to use this entirely for baking I was wondering if you ever added xanthan gum directly to them mix and if so how much? Thanks--and thanks for doing this, too! Your years of eating gluten free are a big help to me!

Thank you so much Jan! It makes me so happy to know that I am helping! I have not added Xanthan gum to my mix, I worried that I would add too much or not enough for the large amount of flours, but depending on the recipe, I would use 1/2 tsp or 1 tsp per 1 cup of flour, for something that you want to stick together a little more, I would use a little more. I also have some recipes that didn't call for xanthan gum, and so it was easier to keep it in a separate jar and use as needed. I would say as a starter, add 1/2 tsp per cup of flour mix. Then when mixing the batter, or dough, if it seems to be crumbling, you can add a little more in. I hope this helps! Let me know how it goes!

Hello! I am so glad you are enjoying my videos!! And there are many flours that have gluten, and many that don't. For my flour blend, you could substitute the coconut flour with brown rice flour or sorghum flour. There are other flours that would work too, but some are more expensive than others, such as chickpea flour, quinoa flour. Teff flour is great too, but has a strong flavor. Hello!! The large jar is about 4 quarts or so, it is not big enough all the flour this recipe makes, but because I do so much baking, it works well for me, usually what doesn't fit in the jar is used up pretty quickly!

Loving your videos!! Came over from Trent & Allie’s channel. I’ve been GF for a year now. It’s been so overwhelming that I haven’t experimented with these different flours as of yet. Thank you for showing us this flour blend. Do you use this blend for all of your baking and if a recipe calls for 1 cup or 1/2 cup, do you use this blend as same ratio?? Also my hubby loves white gravy & biscuits and brown gravy when I fix a Roast, do you use this Flour blend for this?? Thanks in advance for a reply🤗

Recently I bought a huge quantity of oats and I wanted to use some in a GF flour blend I tried to make. So I ground up about 8 cups of oats to make some Oat flour. Well I obviously put too much in my bread recipe (mixed with other types of flour). I think I used 2 cups of the oat flour. Then I don't think I put enough water (liquids) in my recipe because my bread came out like biscottis instead of loaf bread. I was trying to make sliced bread for sandwiches. Can you suggest a good flour blend that includes ground oats in the blend? And If using oat flour how do I adjust the recipe with the proper liquids for a bread loaf recipe? I know that oats absorb lots of liquids so I get lost with trying to figure out the proper liquids needed in this case. Please advise!

This is a great question!! I have not used oat flour very much, but have wanted to experiment with it!! I have wondered about it absorbing the liquid too. With my flour blend, I have learned that adding in an extra egg does a double duty of acting as a binder, but also adding in more liquid to help things not dry out and become crumbly. That is if you are using eggs. If not, a flax egg would work, or chia seeds. I would also try adding in a little extra liquid at a time until the consistency looks right. In my experience with gluten free breads, the more batter like the dough is, the less dry and crumbly the end result is. And sometimes with a heavier flour, I will add a little more of a starchy flour, such as tapioca flour, to help lighten it up. There are some bread recipes/ videos here on my channel where I use different combinations of flours, those recipes might be helpful, I would think that some of the other flours I use are similar to the oat flour. ​@@jillygsglutenfree4063 So far in my next attempt I have only gotten as far as making another flour blend to experiment with. This flour blend has 2C Chappati flour, 2C Brown Rice flour, 1C Coconut flour, 1C Cassava flour, 1/2C Tapioca flour, and 1/2C Oat flour. This make a total of 7 cups of a blend. I have blended it all together and I intended on only using 4 cups of this to make 2 loaves of bread. So now my question is with only 4 cups of this mixed blend how many eggs and how much liquid (water/milk/butter/oil) do you think I should start out to use in this loaf bread recipe? I have 2 eggs at the moment and was going to add 1 cup each of milk and water, 4 tablespoons of coconut or olive oil, and 1 tablespoon of maple syrup. Do you think this is a good start? (Then adding in some Baking Soda and Baking Powder of course.)

@@julien2912 I have not heard of Chappati flour. But the combination of flours seems good. Although I would increase the tapioca starch to 1 cup. As for the eggs. I would try 3 or 4. If the dough/ batter is too wet or runny, add in less water or milk. It sounds like you are off to a good start! Let me know if this helps, and how your bread turns out!!!

@@jillygsglutenfree4063 OK. Great! One more question. With this combination and following your revision advice you just gave me, do I need to use yeast with these types of flour in this blend. I tried googling it and I found an answer of yes. I tried this blend with a packet of quick rise yeast and it didn't work. My bread did not rise. It rose it the bowl when I covered it for about 30 minutes. But it didn't rise when I baked it! I did also use 2 teaspoons of baking powder and 2 teaspoons of baking soda. BTW Chappati Flour is something I found at an International store. I think Europeans use it to make Naan bread.

@@julien2912 Hello!! When I first went gluten free and started making my own breads, I used yeast but never had much success. As time has gone on, yeast does not agree with me so I have stopped using it. But I have heard that GF breads need more yeast than traditional breads. I remember making breads with yeast that would react similar to yours, rise a little in the pan, but not in the oven. I have had much more success with my bread rising using baking powder and baking soda. And I will say that even though I have been making GF sourdough for quite a while, sometimes it too is finicky with rising. I think partly due to the dry climate here. I hope this helps!! I have been baking gluten free for many years, and I never keep my flours in the fridge. What does keeping them in the fridge do? I've tried many different GF Flour blends, and I don't remember any of them saying to keep it in the fridge. I'm looking forward to learning new things from you!

Nut flours can go bad quickly. It you keep it in the fridge it will last longer.

Hello!! When I first went GF all the information I heard or found recommended to keep it in the fridge as GF flours do not have the shelf life as wheat flour, especially the nut flours. I have put all of them in the fridge ever since. I always wondered why most GF things in the store are not in the fridge but figured I would stick with what I learned. I go through my flours so fast, it probably doesn't matter either way!

I was about to completely throw in the towel on GF. It, none of it that I tried, is any good. I’d rather almost go without baked stuff as eat the GF. Now having seen this channel I may bite the bullet & try again. What I wanna know tho is, how do you know how many eggs to use in a recipe, also, salt & leavening agent? I mean with a recipe I guess the instructions for salt & leavening would be on there, but what about the eggs? Just eyeball it, or check the consistency?? You did a great job & I adore the crazily huge bowl, dang it looked as big as your body, LOLOL. Wish I had one, surely would come in handy for different things.

Daughter In Love has an allergy to coconut flour so any suggestions for a substitute for just that one flour ? I adore your channel, and appreciate you sharing your recipes. This momma in law loves to cook for her family but the GF thing without coconut flour and palm oil allergies make it challenging. I’m always up for a good challenge though!! I look forward to hearing from you.
