The REAL context is that this comment came off the back of a guest using square and cube powers in the numbers game to reach the target, which is against the rules. Jelly is typically portioned in square or cube based shapes, hence the jelly factory.

He definitely has writers. Sometimes you can tell the joke has taken him by surprise (on one particular episode, I think the joke was about jon, and he couldn't help himself from laughing afterwards and admitted the joke took him by surprise).
