Having made a few ruined batches of candied citrus peel, I was very skeptical about the inclusion of pith in this filling. I anticipated having to make a second batch using zest and fruit minus pith. For any doubters like me I am happy to report it was absolutely delicious and there was no overpowering bitterness. So sorry I doubted you Joan Nathan!

My sons love them made with cherry pie filling! They really are zmazingly good. You can basically use any sugar-cookie recipe. In a pinch I've even used the pre-made icebox cookie stuff in the refrigerator section of the supermarket and they came out great.

great recipe, but I recommend a few changes to anyone who uses this. First and foremost, brush the hamantaschen with an eggwash before baking. If you wish you can sprinkle a sugar or cinnamon/sugar/nutmeg over the wash to layer flavor. Secondarily, the filling can be switched for any other filling. I have actually modified this recipe to work with a mashed potato, beef, and gravy filling as an appetizer. You use less sugar in the dough, more salt, and dissolve a beef bouillon cube (or equivalent dried stock) into the wet mix while making the dough. obviously leave out the vanilla as well (the beef flavor replaces that as the cornerstone) the result is awesome.

Hello I just made this recipe and its wonderful, but this does not taste anything like a cookie but more puff pastry. Can someone please let me know if theirs turned out more of a cookie and crispy. Or soft and puffy like a pastry. Thank you

Such nonsense. Dried figues are from Persia!!!!????. Figues are one of the special 7 fruits (species) of Israel. Shivat haminim. wheat, barley, figs, dates, grapes, olives and pomegranates, the Seven Species (shivat haminim), are mentioned many times in the Bible.
