Believe it or not, the orchestra is an absolute lockstep with his tempo instructions, and if he were to change them (even for no apparently reason), they would follow. Look up some of his recorded scoring sessions where he is subtly adjusting tempo to make the music fit perfectly with the already edited film footage.

The musicians can see the conductor from their peripheral vision! Conductors help keep the ensemble together and help shape the music in a unified way.
