Just to help avoid any food waste, I always rework trimmed pastry into the shape of bay leaves and sit them on top of the pie. If you do the leaves thin enough, the pies get a bit more visual character without any of the pastry remaining doughy

Thank you for mentioning that they can be frozen and at what stage! Since I am usually just cooking for one or two people, I'm working hard on not cooking huge amounts as often as I used to when I cooked for a crowd. Being able to make four pies and put two in the freezer for another day is just perfect!

I make Johns’ steak and onion pie in hot water crust pastry, 8” tin. It costs about £9 to make but I cook it, let it cool then divide it into separate thirds in foil then put in a freezer bags. Each third serves 2, that’s three meals for a couple @ £1.50 a head 👍🇬🇧. I defrost it in the fridge before reheating.

Can't thank you enough for sharing your secrets. My favorite local Scottish meat pies mom & pop bakery closed down last year, their kids didn't want to keep it going. I was shattered. Fantastic looking pies there John. The ultimate comfort food. I've tried many times to make meat and potato pie like my mum used to make in the 60s, but I just can't get the pastry flavour right. I'll give this recipe a go. I think lard is the key ingredient.

I've been using your hot water pastry recipe for a while now, my friends love it. But i also add white pepper, it just gives the pastry a little extra hum. Made some pies last week using your doner kebab recipe as a filling ... friends loved them.

Hmm, these are going to help get me through Winter! Thanks John! You really do make some exceptional pies. It seems so obvious, but I never considered adding potatoes into a mixture before, I'd normally parboil them first and chuck them in at the last second to combine. I bet your method makes those potatoes taste fantastic! Think I'll be making these sometime during the week!

I had some beef to use up so cooked it with onions in the slow cooker yesterday. Going to try your pie pastry today, probably chuck a few cooked potatoes in with it to cook through. I think you are amazing sharing your knowledge, nice to hear an accent I am familiar with, being a north west gal myself! I was taught royal icing by a retired baker, he was fantastic. And sugarcraft by a retired cake decorator. All useful skills, although I am now in my 60’s too!

I did something remarkably similar to this for dinner last night! I didn't have any carrots or celery that I usually add to chicken pot pie filling, so I was like, Welp! Better do my best with what I've got! And it came out delicious! I do wish I'd watched this last night for boost in confidence that it would though! I think I'll use this specific recipe in the near future though.

Oh, that looks fabulous! I think it's a keeper! I made your Traditional Scotch Pies a couple months ago, and we had leftover pies that I put in the freezer. I got 2 out for my husband and I the other day, and they tasted just as good as the day I made them. Your crust recipe makes a much sturdier pastry than what I use for fruit pies, and that makes it so easy to handle them.

I love the easiness of making your recipes and of course how it tastes after " I " made it. There is one recipe that I would love it if you made a video on it and that is "Plum pudding". My mom use to make that when I was a child but I haven't had in so many years that it would be great if I could follow your guidance to make it once again. Thanks Mr. John

Also, we in French Canada we have what we call "tourtière" which is basically what you just propose to us but with the potatoes and meat all crushed together. Being allergic to onions and garlic, I simply skipped those and only use onion salt, and pepper. Yes it does taste a bit plain but somehow when I have visitors and serving my meat pies, not only do they it all I took out but also ask for the recipe - so simple.

Hi John, I only came across your KZbin channel the other night, it popped up on my phone in my news feeds, I love cooking when I am off so really tired after my night shifts I decided to give this a go. Dinner was a little delayed than normal as I had to go out and get the ingredients and give the filling time to cool, My wife said it was well worth waiting for, my son who I normally have to ask came in and said he loved it. It was well worth the time and effort and I will be checking out more of your recipes in the future, keep up the good work 👍👍

I am so excited to see these! In the 1970's I went to AFCENT international school in Belgium and the school cafeteria sold these English pies. I've been looking for a recipe ever since. Have you ever seen one with rice instead of potatoes?
