Made this bread today, divided it in two ,made two lovely cobs, reminded me when we were kids ,the baker would deliver two cobs three times a week,I would slice it thick,spread Welsh butter on it thickly, for my sister and I then run outside to eat,we faced a telling off from mum for eating half a cob ,it was delicious,worth the telling off,this John is fabulous,wish I could get Welsh butter.

Hi John. Your recipe for the wonderful white Cob worked a treat. I now have a lovely loaf of bread. Being quite elderly I used a stand mixer to mix the dough - just as well as it almost wrecked the mixer on slow! I’ve made this today for the second time.....absolutely brilliant! The first one made lovely sandwiches, then we had toast with some that was left....beautiful toast! And the last bit I made into breadcrumbs to go in to a Tunisian citrus cake.......which was also superb! Hey John, it's good to see another of your cool bread making videos. I bake every week and my standard ratio for white bread is 500 g flour and 330 g water. For wholemeal bread I normally use 500 to 440. For higher hydration bread like Ciabatta or Baguette I look for the instructions in your videos👀 Keep healthy and sane in these crazy times !

Thank you John for your inspiring and enthusing video. I have twice tried your baguette recipe, carefully noting your comment about following your recipe in close detail. My first baguettes looked more like miserable little breadsticks, the second attempt resulted in an uncooked middle, quite raw in fact. Please follow these 4 simple rules when making these baguettes. Give me a comment if you need any more help. 1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results. 2. Use digital SCALES for all of the measurements including weighing the WATER, IN GRAMS, NOT FLUID OUNCES, don't convert to cups or measuring jugs, they are too inaccurate. try to use bottled water if possible. Tap water contains chlorine, and in certain areas it is higher than others, which will weaken or even kill the yeast. 3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread. 4. That bread looked amazing..sadly bread flour and yeast are non existent here in southern Ireland due to panic buying ..but as soon as restrictions are lifted I'm going to try this recipe..thanks as always for posting John...be safe take care

I make a batch of bread most weekends, obtaining bread flour is a bit tricky at the moment. There's real knack to slashing a loaf with a baker's lame, I find a light smear of oil on th blade helps. Please stay safe and post when you can. Real bread with no chemicals!

Follow the 4 main rules below very carefully, and you'll do fine, especially No2 and 3. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results. 2. Use digital SCALES for all of the measurements including weighing the WATER, IN GRAMS, NOT FLUID OUNCES, don't convert to cups or measuring jugs, they are too inaccurate. try to use bottled water if possible. 3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread. 4. nice recipe using my fast dwindling yeast....Makes you appreciate why in the past people were content to have bread with jam and butter as a treat though not until it was made into a nice cheese and branston sandwich. Tomorrow will be toasted if any even left! Thanks John. If I run out of yeast I find sourdough just a bit too fiddly (have tried in past and it is good no denying) but I will have to go to soda bread!
