I haven’t baked in years but my neighbor is British and keeps casually mentioning these amazing pies. Her arthritis prevents her from making them so I thought I’d surprise her with some. Tip for separating fat from stock without having to spoon it out. Pour it all into a watertight jar or container and turn it upside down in the fridge until the fat solidifies. Then turn it right side up again and the broth can be poured freely without taking along the fat, and you can save or dispose of the fat as you like.

Thank you John for this. You have brought back an amazing memory. When my (Scottish) Grandma had to go into surgery back when I was in University, she made enough Scots meat pies for my Grandpa to cover her stay in the hospital. He burns water. She left him clear written instructions on how to warm them up. Well one afternoon, he called me and asked me to come over and watch the hockey game (we live in Canada) and said that my Uncle Sandy was coming too. Long story short, Sandy, Poppa and I ate all of the pies in one evening and Sandy and I had to take him out for supper for the next week LOL.

I'm 54 now, my Nanna showed me how to make these at 7yrs old, from the age of 13, she and I were making them together as they went into the mens lunch packs. We'd make the pastry on a Saturday, make the pies on a Sunday, for my dad and 6 brothers,, 45 pies!! I know 7 x 5 is 35, but we all liked them lol. I still make them to this day, exactly the same as she taught me. I'm currently teaching my 7ry old granddaughter the same method. It was so lovely to stumble on your video :) xx

I made this last week. I said I would. It was by far the best crust I ever made. Some “chef” said to just use store bought pie crust bcs it’s easier and the results are the same. Pfft~The tip you gave of putting it on the bottom rack was a winner too. Thanks !

@@hongtse6723 I did use less! I ran out of shortening, haha. Almost the same. 90g..oh wait, you’re asking if you need it, yes you do need the butter and shortening if you want this traditional kind of crust. There are other crust recipes using grated cold butter and such. Look it up. Cheers

Reminds me of the Cornish Pasties my Mom would make! She was from Peterhead Scotland. She passed away in 2019 after a long battle with Alzheimer’s. I sure miss her. Thank you for the lovely recipe! I can’t wait to try it!

My Scottish family makes minced beef and onion filling, thickened with old fashioned rolled oats, ground or toasted, with an equal volume of ACP vinegar, that is repeatedly simmered until a light crust is formed on the bottom of our cast iron pan, then scraped from the bottom of the pan and covered with water again, until the oatmeal is the same color as the meat, three or four times until ready for final additions of salt, pepper and beef flavorings. I use 2 ounces of oatmeal to 2 ounces of vinegar for a pound or half kilo of 10% fat ground sirloin. Kids and adults love the hearty taste with mashed potatoes and mashed (sweeds/rutabegas). This filling also makes great hot sandwiches in any kind of bread, and a cold filling for small pies cooked as you do. Thanks for your wonderful tips and tricks!

What a charming comment! I get 'homesick' for places I've visited and loved too, I know exactly what you mean. Whenever I make Russian pickle soup and serve it with dark rye bread I think of making it in the kitchen of my holiday apartment in Berlin. So I make it often in winter just to bring back the feeling of being in Germany. Same goes for Japanese food. Can't wait to travel again. I miss the world! :D

@@revengenerd1 I think the homesick feeling is more about the presenters voice, attitude and the fact that it's a pie.... I don't think the fact this is a scotch pie matters too much and even if it did the English have been making them for a thousand years and more..

What a joy to listen to his calm concise way that he explains things,. I could listen to him every day. I was imagining my dads' Scots grandmother making meat pies, which makes sense as she ended up in Canada where they do meat pies too. I wish I had grown up with this, I am going to make it, as I love lamb and channel my Scots ancestors.. It is about time I do a hot water pastry, I will be 71 soon enough.

Oh John, the most impressive thing for me is people who make REALLY GOOD pastry from scratch. Whether it's sweet or savoury, if you can knock it out of the park then your recipe is already 85% there. Great pastry is how I know I'm dealing with a really good cook. They make it look really easy and it isn't. Same goes with making croissants from scratch. Deeply impressive. Thank you for this video, such fun and so helpful.

Went to the UK a few years ago. I was blown away by the cuisine. The pies, the SALMON, the pastries, the lamb, the local produce, and yes even the haggis was delicious. Edit: I bet these pies would be good with a Beef-Pork-Lamb or a Beef-Pork-Veal mix. Or even a ground sausage mix. The sky is the limit, boys!

Have just been teaching my 8 year old Grandson to make Scotch Pies cos his Nana Scotland is coming to stay and it will be her birthday. We've had to make 2 larger pies as we did not have the smaller patty tins to hand. This video has been great cos at every step we have rewound it so Jonah can see exactly what we need to do. Jonah says that John is better at cooking than Gordon Ramsey 😂😂🎉

My goodness, Sir, it sounds like the Scottish Winnie the Pooh is reading me a bedtime story about making savory pies. Now I am soothed, hungry and nostalgic. The baby doc that I had with my first child was also nicknamed Pooh for his bedside demeanor and it really helped me through a very tough time. It's not just your voice. I just watched this video with my son. He's been spending a lot of time in the kitchen with me learning some of the traditional family recipes. Whilst watching, I mentioned to him that a boy who can cook in most cases has spent time with his mom in the kitchen. I told them you probably learn how to cook from your mom. That's where I learned. Unfortunately in my son's case his mom doesn't spend the time with him in the kitchen and quite frankly, he'd rather spend the time in the kitchen with his dad. We make it great father and son time. Thank you so much for sharing the video. It was altogether lovely and soothing to listen to your voice

Made these today in Rhode Island, USA, and I followed this recipe to a T. I used lard, which isn't easy to find in the regular supermarkets near me, but I knew a place that sells it. So good, and the way they pop out of the pie tins as compact, perfectly formed little pies is so satisfying. Thank you!

Lard's not hard to find; I get it at Stop & Shop, although it's usually hidden among the "Hispanic" items. Look for the boxes that say "manteca."

I first encountered these pies many years ago whilst hiking in Scotland. However, the crenelated edges were much higher on the pies I found in the shops. I asked a Glasgow born friend of mine why the edges were so tall and he told me it was to fill with baked beans on top of the pie, which is how he ate them as a kid.

In the States, I make these with your crust recipe (which is PERFECT to hold up to a little juice and such and bakes up wonderfully! I make mine with lining it with leftover creamy mashed potatoes in a nice layer on bottom, then pieces of leftover pot roast and caramelized onions pour a little of the gravy (couple teaspoons/tablespoons depending on size of pie) from the roast (thickened a fair bit thicker than your's so as not to make the crust soggy whilst cooking) then put the top on and seal. I serve with a side of broccoli casserole or country green beans (I'm Southern) and drizzle the gravy over the top like you. I've also done it with meatloaf leftovers and it was a huge hit. PERFECT for a cool evening meal or a good steady rainy day. The crust is versatile for virtually anything that you want to make a real hearty meal out of.

As a yorkshireman, I can say that at face value, our food is quite plain. But its that wonderful feeling you get of absolute contentment while eating it. You just feel warm and at home. Almost like you are just sat in a lovely room, with a roaring fire. Relaxed and comfortable. Thats what I'd say defines british food. Uncomplicated, and comforting.

The kids love them because there is no carrots poking out of the pies. A big hit in my house, thank you for sharing!.... That's very sweet of you. N its the practical things help. N just being there. Having lost my brother n his son (14)tragically , I had a big journey alone to make to get to my home country n apart from my own grief n shock, at the time n now, both so young n vibrant...just gone??...the things I remember my parents being able to eat when a plate was put in front of them. Its a sort of mechanical reaction. Now,couple years on, I look back n in the fog I do remember ppl walking in ( it was just before kovid flu thing_small mercy) with dishes of homemade nutritious meals. You have a kind heart n know this is the right thing you're doing for your friend.

Watching from the North East coast of South Africa, and we love our meat pies here. 🇿🇦 Also, another underrated spice that flavours meat is dried coriander seeds. Use 1.5 teaspoons and give them a light crush in your pestle and mortar, or use a folded serviette and a rolling pin

Scotch Pies are the best, especially when bought from a local baker (not Greggs or supermarket). Holdable comfort food ... first memories of coming off the Accies mini-rugby pitch at the age of around 8 or 9 and tucking into a hot pie, have loved our humble Scotch pie ever since.

I made these last night and they were a big hit. I felt like I was in a rustic restaurant somewhere in the British countryside on a cool, overcast evening. The taste of these evoked a holiday feel as well, so these would be an ideal meal for around the Christmas break. I had trouble keeping in mind that I was the actual cook. Thank you, Mr. Kirkwood! I didn't notice but he does sound a bit like Winnie the Pooh, this will probably cause the video to be censored in China. LOL. If only all cooking videos were so professionally produced. This guy/bloke is impressive in his meticulous presentation and attention to detail. And as an American I really appreciated including fahrenheit temps and his translation of English English to American English. I loved his accent and the tone and style of his voice. And those pies look so Dang tasty! Of course I subscribed immediately and I will checkout his website for some of those pastry guid sticks. I never heard of them before being the amatuer I am.

Just so you know, if you want to learn more about the man's accent, he's either from Newcastle or from Sunderland, or from a town or village outside of either. It's one of the most interesting accents in the UK, and there's LOTS of stuff online about it if you're further interested. As you can hear, some of the vowels follow patterns found in further south in Northern England, but some of the vowels are closer to Scots. This is partly due to the fact that the Tyneside is closer to Edinburgh than London. It's closer to Edinburgh than most of England to be fair.

Oh MAN does that look and sound delicious! I haven't had Scotch pies in YEARS, the tradition of 'pastry shops' stuck around in Canada here longer then the US, and even up to my teen years I was able to get bridies, Scotch pies and other tasty British pies with ease, but just about all the places I used to go have closed in the last 10-15 years so I just kind of forgot about them. Your recipe here and this mouth-watering video presentation inspire me to get off my arse and make my own. If I can make a Japanese-style chanko-nabe, I should damn well be able to make some food of my own ancestry! Thank you for this video.

Yes, I've seen so many shops that sell the minced meat pies (the meat ones, not the desert type)... but, they're always so... lackluster, or, just too much artificial or soy filler.

There was a Scotch pastry shop near where I grew up in Montreal. They always had stacks of these pies in the window. I like them cold as much as hot, and it was always a good day when you found one of them in your lunch bucket. That shop is gone but they're still common in parts of rural Ontario that I travel through.

Found my way here after going down a pot pie rabbit hole. It's like watching my old uncle Reg in the kitchen. The only difference is he'd punctuate statements with a rattle of his scotch glass, and usually by the end of cooking the scotch had made his accent so thick that only the family could understand him. lmao

What I do with the fat is pore it in a jug of cold water and let it cool solid then use it and mix seeds in to feed the birds I make fat balls so nothing goes to waste and the birds scoff the lot and love it. Looking forward to making your pies.

I'm a "flexitarian" and really trying to reduce the amount of meat I eat and eat mainly fish and poultry. But when I saw the comment you sounded like Winnie the Pooh. I had to watch. But can I make a suggestion about what to do with your excess meat fat from the stock. You can turn it into wild bird food. That's got to be better than putting it into the bin. Maybe mix some seed/grain into the fat too. You'll be rewarded with some lovely little visitors to your garden all year round.

I find Firm Tofu can do well in many gravy or sauce based meat recipes, due to Tofu's tendency to pick up the flavors around it, assuming you don't object to the beef stock itself. In this case, start by caramelizing the onions, adding stock, then crumbling firm tofu and adding to the mix, add your bay leaves, and simmer for 10 mins. This also eliminates the need to skim off the fat. You may need to do a longer simmer to get the flavor into the tofu. The rest of the recipe is prepared as normal.

One of the best tutorials. Details count. How many cooks/chefs both on television and on the KZbin Channels use spatulas? One of my pet peeves is watching cooks leave so much in the bowls, when a simple spatula would do keep the recipe consistent. Nice to see someone who cares enough to demonstrate the "art" of cooking. And, the recipe looks delicious! Winner.

Must try these. I love meat pies. Also, with make-ahead recipes, an easy way I've found to "drain" fat off stock is to refrigerate it until the fat solidifies, then just peel it off.
