I am an American. I made fufu for the first time yesterday. The family loved it. I will make it again, trying it with the skin left on the plantain.

I have been enjoying it for the past decades. Blending raw plantain is better for the blender or you use yam pounder for the cooked plantain. Speaking from experience. I even prepares plantain with skin and what the Igbo tribe calls "ONA". So lovely for diabetics. ONA is a sweet -bitter round yam. Very medicinal.
