Recipe here: www.joyofbaking... Stephanie Jaworski of Joyofbaking.com demonstrates how to make a Chocolate Genoise. For this recipe, we take two layers of Chocolate Genoise and first soak them with an orange flavored sugar syrup. Next, the two Genoise layers are sandwiched together with a thin layer of raspberry jam and a rich and creamy Chocolate Mousse. I like to finish this cake with a shiny Chocolate Ganache and pretty swirls of the Chocolate Mousse.

I have just started watching your videos and one thing I really appreciate is how detailed you are at explaining the recipe as you go along. And converting the cups into grams does help, especially in europe. I am from Portugal. All the cakes look delicious and beautifully presented. Thank you very much for sharing. 😊❤

doggie at 37:37 is so cute ! ok so will be making this cake soon, it looks absolutely perfect ! I've made the Genoise before for the BF Gateaux and it turned out perfect so I am positive this will be a success as well ! What a fantastic channel, each recipe I've done has turned out perfect ! honestly the best out there

@@jeanburgess2342 You can make your own. Use 2 cups of all purpose flour. Replace 2 TBSP of flour with corn flour. Mix and voila you have your own cake flour.

As usual..best recipies..i have no patience..but does the taste of geniose differ from sponge cake in which we seperate the eggs? I am not sure that this method will secceed.. By the way thursday is our preferable day followed by friday..our holyday in jordan.😍😍😍

Wow!!! Such a decadent chocolate sponge! This was my first ever attempt at a genoise and it came out amazing! It is fluffy and rose beautifully! I made this into a mocha mouse filled chocolate Swiss roll and covered it in that ganache glaze. Wow!!

Hi Stephanie, Thanks for the video. The first time around, the cake turned out great, but the next two times, I am having problems dissolving cocoa powder in the egg batter. It is from the same box of cocoa powder as the first time. Small lumps remain no matter how much I mix and they finally settle at the bottom of the pans while baking. Any suggestions?

Hi can I know if I'm to make this cake in 1 pan and then cut it in half, what size round pan should I use? Can it be made in a square pan too? If so what pan size do you suggest?

I would check the expiry date on the packaging.

If you layer it in the cake it won’t deflate.

i see you are using a convection oven,i have one as well,is it still 350 degrees with convection? some bakers say to go 25 degrees lower than required temp

It depends on your oven. Older convection ovens require a reduction in temperature but many newer ones don’t. Check your oven’s manual to see if they recommend a correction.

If you want to make the genoise that far ahead I would probably freeze the cake. But you could take it out of the freezer the day before you need it.

i made this using a single pan. the top half turned out ok but the bottom half turned out pastey/dense. what is the reason and how do i prevent this from happening? thanks

If the melted butter isn't completely mixed into the batter, then that can happen.

Is there anything that can be done about the grainy texture of the leftover mousse that was piped on top of the cake? I find my gamache also grains up if I leave it in the refrigerator :(

You could try adding a tablespoon or so of heavy whipping cream and whisk it in.

Hi i live in UK and we don't find cake flour here. So if you could please tell me how much cornflour to add to all purpose flour to make it 3/4 cup.

For 1 cup cake flour, take 1 cup all purpose (plain) flour, remove 2 tablespoons and replace it with 2 tablespoons cornstarch.

I'm unsure about how much syrup to put on the cake. Do you want to soak it? How much of the prepared syrup would you use for one recipe?

It depends on the dryness of the cake, but you typically brush a cake with 2 - 4 tablespoons of syrup.

I tried this recipe last night, i am not sure, why my cake top was burned..in my 2nd attempt i tried the oven temp to 175 instead of 180. Still burnt but better than 1st one. any suggestions plz?

If your cake is burning on the top it’s likely you are using the top heating element. You should only use the bottom element as the top is meant for broiling only.

You could use springform pans. But I would put the pans on a baking sheet in case there is leakage.

What an absolutely beautiful Genoese cake Stephanie, this is an easy recipe and perfect for mother’s day. I was wondering if you could use a hand mixer to mix the eggs in the bowl over the heat instead of a hand whisk ? I was just curious. Thank you

I've never tried using a hand mixer when warming the eggs, but I think you could do that.

I love marshmallow cream with chocolate cake. I was going to try making this cake but adding a layer of marshmallow cream (homemade) on top of the top layer before adding the ganache. What do you think?

I have never made a layered cake and i made this cake, i kinda cheated and used devils food box mix , i live in a very small town and I couldn’t find cake flour but, i made everything as you described and it turned out amazing, it was moist and really good, thank you for giving very clear directions and very professional no extra stories that has nothing to do with what you’re baking. I don’t understand why there are dislikes but your recipes are amazing.. thank you.

A pastry chef I know makes genoise using only the egg whites, sugar and flour- he whips them up to a stiff-peaked merengue, folds in the flour and bakes it. His claim is that, well, it's more economical; use the egg yolks for the pastry cream and the whites for the cake. Throw nothing away!

That's not what I meant. Allow me to expand; a pastry cream requires egg yolks -but that just leaves egg whites that you can't use directly. Yes, you can use them in another recipe, but in most cases, let's be honest, they'll just be cooked or thrown away. So; by using the egg whites for the cake part and the egg yolks for the cream, you minimize wastage of ingredients.

Bridgette Pruitt Of course! The greatest thing about cooking in general is that there's far more than just one way to do something. From substituting ingredients, to personal touches to everything imaginable. Don't take my comment for meaning that I disliked the recipe shown here -more that there's a way to do it in such a way as to let you cut down on costs if you want to make a custard rather than a buttercream or mousse. Since most custards use egg yolks, that leaves you with egg whites -and often it can be quite a few of them (the other day I made pastry cream for a cake that left me with 10 egg whites, for instance). It's always a good idea to know your options and choose what suits your needs at the time.

I was thinking PEANUT BUTTER with CHOCOLATE! Then you added a layer of RASPBERRY, 1 of my favorites. Then I thought, how about all, maybe add CHERRY or BANANAS? DELICIOUSLY ~> YUMMY!!!! 🍯🍫🍌🍒🙀😻😺

I have been watching and making your recipes for years and not one has failed. You are amazing at how you explain the steps and also what I love is that you do not waste anything at all that is left over. You always give ideas on what to do with the left overs. You are also a very neat baker which I also love. Instead of having a messy counter you always make sure that you are prepared with a plate or paper towel to place your utensils. In my book that speaks volumes about you. Your love of baking comes through in all your videos. Thank you for all the effort that you put in for us.

The cake looks gorgeous. I would love to try the recipe but I have several questions. What brand of cake flour did you use in this recipe? Instead of raspberry jam, can I use homemade strawberry? What size of piping bag did you use in the video?
